I just core the cabbage halves, remove the outer leaves, and use the 2mm slicing blade on my Cuisinart food processor for the cabbage, and the 3mm julienne blade for the carrots. Super fast. Then from another recipe I found a few years back I soak the cabbage (not the carrots) in a large bowl of water in the refrigerator for two hours or as much as overnight. Then I dry it in a salad spinner. This step removes a too earthy off taste in raw cabbage I find objectionable.
