Ingredients:
For the filling:
200g cabbage
1/2tsp salt
100g onion
10g ginger
3 cloves of garlic
20g chinese chives
10g dried shiitake
For the dough:
200g all purpose flour
110g hot water (adjust the amount of water if needed)
For the sauce:
2 tbsp soy sauce
1 tbsp vinegar
1 tsp toasted sesame oil
10g green onion
1 tbsp toasted sesame seeds
1 tsp chili bean paste (optional)
1 tsp sweet soybean paste (optional)
Instructions:
1. sprinkle salt over cabbage and wait until water come out.
2. soak dried shiitake for 10 minutes or so.
3. mince all the vegetables for the filling and put together.
4. make the dough. divide the dough into small pieces.(13g each)
5. warp the filling.
6. boil the dumplings for 2 - 3 minutes.

【材料】約25個分
キャベツ 200g
塩 小さじ1/2
玉ねぎ 100g
ニラ 20g
生姜 10g
にんにく 3つ
干し椎茸 10g
中力粉 200g
お湯 110g(お湯の量は調整してください)
醤油 大さじ2
酢 大さじ1
ごま油 小さじ1
炒りごま 大さじ1
万能ネギ 10g
豆板醤 小さじ1(お好みで)
甜麺醤 小さじ1(お好みで)
【作り方】
1、キャベツに塩をふってしんなりするまで置いておきます。
2、干し椎茸を浸水しておきます。
3、具の材料を全てみじん切りにして合わせておきます。
4、皮を作ります。中力粉とお湯を混ぜ、一つ13gくらいに切り分けます。
5、具を包みます。
6、水餃子を茹でます。途中、お湯が沸騰したら差し水をしても良いです。(その方が気持ちモッチリします。)茹で時間は2分くらいです。

Then you must come to india and see the way the local sellers chop it in a moving trains all in their palm while standing in a crowded place with just a small pocket knife. To top on that it happens in just 4-5 seconds for each onions of the same size and video.

Never in my life have I considered making dumplings, but when I saw it was just flour and water I decided to try it. I had all the ingredients except for shitake mushrooms. These turned out pretty damn good. They looked awful. I couldn't make perfect little circles, but they tasted great. Thanks, Peaceful Cuisine!

We use a stone that has a flat side found by a river side. It works. But still not this sharp. Also the bottom or ceramic cups and saucers work in a pinch.

I personally NEEDED to discover you. Whenever I watch a cooking tutorial or whatever, they ALWAYS have music so I have to turn it down really low or outright mute it. This is PURE HEAVEN. THIS is what real cooking sounds like. #NoMusicFan

Quick tip for cabbage: If you're not planning on using the entire thing soon, just peel of the desired amount of leaves from the outside. Threst will stay fresh for much longer than a cut half, and you don't need to worry about having to eat cabbage the next few days. (Usefull in single households). Hope it helps someone :) And thank you for all your videos, they are a great source of joy and peace!

Joe Ardanillo good tip, however, not all part of the cabbage tastes the same, the inner part of cabbage taste more tender and juicy than the leaves on the outside.

you can sharpen any knife to be sharp as long as you have a good wetstone or sharpener (even super sharp knives will get dull after some use)

@@qzg7857 Sadly you don't know the difference between a dumpling and a pierogi. A pierogi is boiled, then fried or baked. It's also traditionally in the shape of a crescent, but the fillings can vary widely.

Honestly, I wish there would be entire cooking lessons like these, I have learned so much just from listening, watching, and seeing how he chops, etc. Super interesting and very cool...you should do a tutorial on your chopping skills!

cut the onions in half and drop them into the water for a couple of minutes will make it less pungent.

Sometimes if your knife is sharp enough, the blade won't cut through the spores of the onion which won't cause you to cry. It looks like his knife is pretty sharp, so I'm guessing that's why. (I could be wrong though)

GUYS I FOUND A LIFE HACK! wipe your knife’s blade with olive oil before cutting onions. It WORKS!!! I just don’t know if other oils will do the job too. Waterworks beGONE

All I was thinking about when he minced those "shiitakes" (which look like - and probably are mushrooms) was Prince Naveen in "The Princess & The Frog", where he learned how to chop mushrooms. If you remember this You're my best friend 😢

People keep saying ASMR, but I maintain this is something different and better. ASMR is just some strange tingle effect based on sound and someone maybe talking like they're taking care of you in some way. It's about being soothed. Filmmaking like this is about heightening awareness. It's like little zenny life lessons. After seeing these videos, I find I do ordinary, 'dull' things differently, with greater attention and pleasure: washing a bowl, folding the tea towel and putting it back on the oven door etc.

I guess that car mechanics often wonder why people don’t fix the easy things themselves either, but then those people don’t share the passion for cars that the car mechanics (hopefully) do have. Not everyone wants to cook for themselves and to me that’s perfectly fine. Do whatever pleases you in life because life is too short doing things you don’t like

Somehow this is incredibly satisfying, relaxing, and beautiful. That’s what I want cooking to be for me sometime In my home Alone or with someone watching or cooking along Peaceful, meditative, precise, rhythmic and free verse all in one. Little thoughts wrapped up in dumplings and spilling through steam So careful and loved, it cannot taste bad, that would be impossible A simple and sustaining deep breath in the running way of life

I remember being a senior in college and I couldn't sleep. I found this video and it was able to calm my anxieties enough to help me fall asleep. This became a regular video and channel for me. It helps to quiet my mind and ease my worries when it is hard to do by myself.

lol this is really a very light meal. The raw vegan dumplings are alreay floating on the surface of the boiling water. (Normal meat dumplings will sink to the bottom at first and then raise to the surface when it's cooked thoroughly)

the sight and sound of the entirety of this video is so divine to watch, from the sound of the knife touching the board the crispiness of the fresh cabbage,the boiling water ,the pounding of the roasted sesame seeds are already a music to enjoy while feeding your eyes with that lovely yummy dumplings.-- is an art to begin with. ;)
