"I'm sorry this recipe isn't perfect" Shaddup. As someone who isn't vegan, this is ingenious and very well done. You work with what you have and, given that you're lacking the egg for the merengue because you're going for a vegan option, it's going to be harder to get fluffy peaks to stay fluffy and peaky when you hit them with the torch. Like you said, you'd need to add a lot more sugar to make it work, and it makes it too sweet for you. What I'm trying to say is, don't worry if the recipe isn't perfect. That's the beauty of cooking: You discover new things, and try new things, and see where it takes you. And as long as you enjoy it, damn the torpedoes.

Lynn G Hi Lynn, it can be used as an egg replacer often. I use it as a egg in home made mayonaise. It can be used in baked goods as well. But I think Flaxeggs (linseed/flaxseeds ground. 1 tbsp with 3 tbsps water = 1 egg) are better in say pancakes and cakes.

I love all your recipes, and while watching the way you whipped that chickpea juice to perfection I was really thinking "gosh he's a magician" - the little "fail" just makes you more human :D and it's not really a fail either, I'll be replicating this soon, when I move to France as I need to prove to my husband's family that we Vegans can have great Vegan tarts every Sunday of the year (they have one after lunch with coffee each Sunday, I can't wait to bring mine ;-) and this will be the first) thank you for one more amazing recipe ps: your ASMR videos are always so great, why did you remove ASMR from the title? ps2: love the new kitchen and the cool new gadgets!

Sprinkle massive powder sugar on top of the foam first, then blow torch it. The sugar will caramelize like creme brûlée while maintaining the integrity of the faux foam.

Here in the South (pretty much anywhere in the Bible belt) deserts are made with lard, heavy cream, eggs, butter, etc. Basically all the ingredients for heart attacks and strokes. But this looks good and I can't wait to try it.

Absolutely none of your mentioned ingredients will cause heart attacks nor strokes...in fact, current research (not put out by a Gov't agency with an agenda) proves them to be healthy fats. "Butter Bob Briggs" on KZbin is one source of great info. Also many Physicians and specialists you can learn from.

I love these videos! I'm interested in your use of the citrus press. As a bartender, I put the lemon half in upside down. The press gets so much more juice from it and essentially compresses the rind almost inside out. Thank you for so many beautiful videos. I always choose 'no music'. I like the sounds of your work very much.

Your attempt was admirable. I watched you with joy and found your ingredients to be unique and educational for me. I am a Pastry Chef and a vegan. I've been baking for over 30 years and hv discovered that the Pastry world does not support changes that result in many success outside of its ridged scientific laws. There are only 5 ingredients in the Pastry kitchen: FAT LIQUID FLOUR SUGAR EGGS if you substitute or replace any of these five, you will not achieve the desired result that you are aiming for. Lemon meringue tart requires eggs. You can get away with a non dairy fat to make the tart dough but u cannot get around the use of eggs. Not even an egg substitute. The velvety silky texture of the egg custard with its pungent sour and sweet taste is where the magic happens. The sweet fluffy sugary concoction that turns egg albumen into meringue, which is the complete contrast to the lemon custard is a masterpiece of Pastry making. The Classic Pastry kitchen is the result of the European aristocracy and its bakers and Pastry cooks who slaved over new inventions for Kings, Queens and guests to enjoy. The formulas that hv been passed down from the 1100s to the present are pretty much set in stone. There is a small margin of tweeking that a Pastry Chef can do but generally speaking, those 5 basic ingredients and there formulations are established recipes that form the basis of all Pastry work around the world. Vegans like you and me and thousands more can enjoy a once in a while treat of a cookie or a tea bread that has been tweeked to satisfy our veganisim, but other than that, it's either non-European sweets like your Japanese moochi or Asian ice desserts or a piece of fruit.
