Ingredients:
150g pastry flour
100g vegan butter
50g beet sugar
Instructions:
1. in a food processor, combine all the ingredients and blend well.
2. shape the dough into rectangular then place it in a fridge for 30 mins.
3. cut the dough and place it in a fridge while preheating an oven to 180C/356F.
4. bake at 170C/338F for 15 mins.
5. Enjoy!

Safety tip that I think you were careful about but in case you didn’t know: cutting into a silicone mat that has woven fiberglass in it like the one you use can get fiberglass shards in your food. So make sure to not cut through the silicone 🙏

This recipe actually doesn’t need a food processor. It would be easier but not must. Just use your hands to blend the ingredients :)

No salt? The world’s best shortbread cookies, Walker’s, contain salt along with wheat flour, butter and sugar. I assumed a vegan version would also use a bit of salt to compliment the sweet and enhance the results.
