I'm not a big fan of pulled pork. I love cooking them. Just not in to eating it. Usually end up giving most of it away. I usually always do fat cap up. I think it makes the meat juicier. I usually go to 160, put it in a foil pan with bourbon or whiskey, Let it run till 200. Pull it off the grill, throw a couple heavy bath towels over it and let it rest till cools enough to pull.

@@BosBackyardBBQ Sorry I was busy watching the rest of you video to the end. When you get ready to "up grade" your arsenal consider a cabinet smoker. I have a Pit Boss Copperhead series 3. It is smaller, has the analog controller, no PID or WiFi. just simple. I've done two 15 pound turkeys in it, chicken even a 15 pound butt. I think the cabinet gives better smoke flavor. When I want a really great job I use my 18" Weber Smokey mountain with pecan chunks and I hang my ribs. I use a quarter inch heat shield and no water pan. My cabinet is 3 1/2 years old and I have had the WSM near 20 years. A lot of stainless up grades on that. More money in upgrades than I paid for the smoker. I have a Camp Chef 24 Deluxe pellet grill. WiFi and PID on the controller. With all the upgrades I have a little over $1600 invest. My cheap Walmart Pit boss gives me a better smoke on my meat. My hopper on that cabinet holds 30 pounds. Right now Walmart has a new Pit Boss Copperhead Onyx. A little bigger than mine. A controller adjustable in 5 degree increments, 60 pound hopper. no wifi or PID. Original $474. They just did a price drop to $247. If after Labor Day they get it under $200 I'd be mighty darn tempted. Oh, I don't know if you belong to Sam's or not. They have extra wide foil there. Keep on grilling young fella.

@@BosBackyardBBQ Being 81 and on SS I can readily identify with the budget issues. I think if you watch year end, after Labor Day sales you might find some pretty good deals. Walmart has already cut the price on the Pit Boss Copperhead Onyx cabinet from $474 to $247. If they get it under $200 I might just jump. Really don't need it as my Series 3 Copperhead I bought 3 1/2 years ago still works great.
