The browning of the tomato Paste looks like it will add a deep umami. I usually add paste after adding fresh blended tomato. Thanks for the deconstruction style.

It works both ways but starting with the paste helps brown it faster since there’s less moisture in the paste! Thanx for sharing ❤️

Just curious, would it change the taste if I blend the onions, garlic and tomatoes together to make the purée?

No it wouldn’t change the taste. I usually prep ahead of time, that’s why i have already blended ingredients separately But occasionally I prefer to do this for those who comment saying they do not see the ingredients 😅

i’m not the chef on this video, but….. cooking onions separately enhances a sweet taste in the stew, which in turn helps balance the sharpness of tomatoes.

@@rahimaarthur9841this is normally true but this stew cooks for so long that you still get that sweetness even you were a bit lazy and blended everything together
