Hi Family, thanks for watching this video. You will notice that I didn’t add any baking soda in this stew like I have done in my other videos. This stew didn’t have an acidic taste so I didn’t need it. This stew is a base, and I thin it out with meat stock, which gives that portion I’m using its unique taste and aroma. Notice also that I didn’t put an overpowering amount of spices in it. This is to ensure that there’s a perfect balance when I add stock while using a portion. Thanks much, my Sis! What do you include to bring down the acidity of the tomato paste? I normally use a pinch of baking soda but it dilutes the flavor of the stew.

My pleasure sis! This wasn’t acidic, but in most of my videos you will see me add a bit of baking soda. I would have used about 2 teaspoons or a tablespoon for this amount of stew❤️

Woooow. That's a lot of stew. Might take more than 2 months to finish it all in my house. It is also thick. How do you get this stew into a flowing consistency as seen for the waakye in the video?

The bulk has no stock in it. For the waakye stew we cooked added goat meat stock. Believe it or not, all that stew is finished last of last week. I made it mid December, but I gifted a few portions so still not bad😄😄😄.

Beautiful and well explained video! You are a beautiful lady and I enjoy watching your enthusiasm as you cook outdoors on your patio. I just returned from Ghana yesterday and I always look forward to the tomato stew and jollof rice there. They are two of my all-time favorite dishes. I’ve made tomato stew at home a few times, but I got a few tips from your video that I’m sure will make my next batch even better! One suggestion from me: I got myself a very tall pot, which is great for eliminating the splatter while cooking this, which also allows me to cook it indoors on my stove. Hello love, the first one I used was purée, almost same consistency as the tomato I cooked down and blended. The second one is tomato paste. It is thicker and givens the stew a bright red color ❤.

You can add ginger. I do add it sometimes and have other videos where I have ginger in it. There’s always ginger on my meats anyway so eventually there will be ginger in the stock I add

This is a base. You can also add some salt, but make it under salted so when you add meat stock, it won’t end up salty. I add salt when I am using it.

You are a fabulous cook and I enjoy watching you, but most of us would not be able to do what you do. You are very privileged and blessed to have very large cooking areas, both inside AND outside, plenty of beautiful pots and pans,powerful blenders,and room to store all of those containers of stew ( or whatever).
