I've been a barista for 5 years and am currently in a program for craft brewing and distilling, one of the biggest things that clicked for me between the two was the actual process of pulling shots of espresso and the boiling part of the brewing process. You're heating the two to extreme levels to extract all of the flavors, but the main key is the grist of your source a.k.a. your grinds or your mash. With both you want to keep the idea in mind of having a very consistent mash bed/grind dosage and tamp so that the fluids are flowing throughout your mash or grinds fluently and consistently. With both, if your grist is too coarse or too fine, then you will lose flavor from certain areas of the grinds or mash that weren't as exposed to the fluids due to clumping or poor fluid circulation.

And it's easy to roast coffee at home for those that are interested. I use a air popcorn maker to make mine.

I finally cracked open my order ofNorthern Brewers starter kit and made Amber Ale block party. 4 days in I noticed I was a gallon short. Will hurt to add the gallon in during the fermentation process or do I just wait until the fermentation process over, and then add the gallon in when I bottle?

You could do either. Especially if it seems to be fermenting find as-is. It shouldn't hurt to add a gallon of clean drinking water during fermentation to increase your volume and dilute sugar to make it easier for yeast to do their job. Was fermentation actively happening -- where they bubbles in airlock and foamy krausen on top of wort/beer?
