As an Italian we just dip the dried tomatoes in vinegar and then store in oil. we don't can it. I am actually putting out a video on Friday on how we do it.

In the southern areas of the United States, Black-eyed peas are eaten for New Years. It is about bringing luck to the household. To cook them southern style, add the jar of peas to a pot with enough water to cover them. Add some minced onions, a bit of garlic, some black pepper, and some sort of smoked meat (like bacon, ham, ham hocks etc). Allow it to simmer for 30 minutes and enjoy with a fresh slice of cornbread!

I over planted black eyed peas a few years ago and ended up canning a bunch to preserve the harvest. Aside from an occasional meal of beans and cornbread, I resorted to just tossing them in soup like any white bean, and also drained them super well and fixed them up like refried beans. Worked surprisingly well.

I rebel can too. If everything is clean and sanitized, I do not see a problem canning something they say not too. For years I did nothing but waterbath canning but I never did meats. I bought a pressure canner for meats. I gave learned since, for example the Amish, water bath everything. It is just in how long it is boiled.

I live in an earthen home on the foothills of mountains. We have a greenhouse/sunroom x2. One is off the main living space and one is off our master bedroom space. We grow tomatoes and other goodies throughout the winter months inside our greenhouse/sunroom spaces. The snows are here this time of year and will be here now until late spring. We got eight inches of snow the day before yesterday. The snow is falling in the mountains next to us as I write. I am watching as it's moving in our direction. Preparation is crucial for us. We prepare all summer long. Your videos are a huge inspiration. Thank you for sharing with all of us.

For sun dried tomatoes, we just leave them dry until needed. Then cover with boiling water and soak until soft. Oil can go rancid over time. Dried can remain good for years if properly stored. For black-eyed peas, we eat with ham (ham hock) over white rice. Side of corn bread. "Hoppin' John' is a traditional food for New Year's Day.

Black eyed peas are good cooked with ham or sausage, also in soup. That peach syrup on vanilla ice cream🤩 I don’t know if you’re familiar with arrowroot powder but it’s great for thickening and some folks can with it. It would thicken your soup no problem while heating it on the stove to eat. Maybe you could use the banana jam as filling in a muffin🤔 It is disappointing when something we put up isn’t as useful as we thought….of course it’s always a lovely surprise when something we put up is way more useful than we thought too💕

Still growing here in South Carolina, tomatoes, Black eyed peas, string beans, peppers, carrots, beets , lettuce, garlic. Black eyed peas add diced ham and serve on rice and sweet corn bread.

The black eyed peas are good if you throw onions sautéed in bacon grease along with bits of bacon or chopped ham steak. All it needs is a heat-up and salt to taste. I suggest serving it in bowls along with baking powder biscuits. We ate them this way all the time growing up.

Love your website, suggestions: black eyed peas added to other beans in chili and also put them in a blender and make refried beans for tacos etc, or any vegetable or minestrone soup. refried beans on a crocker with jalapino slice and sour cream is a good TV watching snack.

Thank you so much. I have made salsa twice the first year it was amazing and I was very proud and everyone who ate it, loved it. The second year… I was so disappointed in my self, I put way too much juice in it, we actually ate all of it, but I will learn from my mistakes. I truly love watching you, you are so real. I drain some of the juice off my salsa to make it thicker. I use the juice for other therthings so don't waste it.

I used the banana butter to flavor homemade yogurt. And any other jelly, jam or butters that don't get used the first year. Hubby has been loving the new flavor concoctions with each new batch of yogurt. They can also be used to make jelly rolls and muffins. I used a jar of Blackberry preserves to sweeten a fresh frozen blackberries and used them in a cobbler.

I love black eyed peas cooked with smoked turkey wings and better than bouillon ham base, black pepper, a little onions and a little garlic. Throw in a few small okra pods and cook until your broth is thick. I then top off with some homemade cayenne or cow horn pepper sauce and eat with cornbread and a big slice of onion. Yummy! I love your channel ❤

I peel and freeze bananas when I get a good deal. They stay nice for a couple months. When they start to turn dark the last chance is banana bread. It buys you about 3 months storage for bananas.

Texas here. We eat black eyed peas a lot here. Usually we make a batch with a piece of bone 🍖 with meat on it. It goes great with corn bread. But it’s also a good filler in soups. Don’t laugh, but when the weather finally hits 60 degrees, it’s soup weather here. We get cold but not northern cold. Except when we got temps colder than Alaska in 2021, and our energy company decided to shut the grid off. It didn’t turn out well. But I digress.

I’ve always heard that in the south they eat black eyed peas on the first day of the new year for making sure the new year brings good things to their family and themselves. I’ve started that tradition and I’ve also not grown up eating them so I’ve cooked them with ground beef or sausage and made either a chili or soup, and at the end, just before serving I add handfuls of spinach. Quite tasty! 👍😘

Eat the black eyed peas as a side with pork chops. They are delicious. They are also a food that is a traddition for some in the south. Eat Black Eyed peas New Years Day for good luck for the new year.

Banana Butter: if you have it there you could make a banana cheese cake or banana pie with whipping cream and banana marries unbelievable with Dulce de Leche or Caramel instead. You could make your lime pie recipe and use the banana butter instead of lime to make the filling. Just make sure to combine with Caramel, Dulce de Leche or Chocolate or Nutella. It's perfect for your season ❤

I am from Texas and we eat black eyed peas just like pinto beans. I put some seasoning bacon in it and cook till warmed through and through.Thenfix some greens with pepper sauce and a big pan of corn bread with butter.

Peach jam...if it didn't solidify just use it for a peach cheese cake or same thing with banana butter: pick the lime pie recipe and replace lime by your peach jam ❤ I do that all the time and it works! Also replacing liquids in a bundt cake, instead of milk use your juice or that liquid jam (if you use the jam take accountability of sugar, so put less sugar than the recipe says). If no many at the house likes it you can make those new cakes or desserts when you have parties and have more people at the table ❤

A bit of advice. Those wooden shelves behind you??? I had one collapse under the weight. One of the top ones. Fell down on top of others. Mess and loss was horrible. I've moved everything onto metal now. An ounce of prevention is worth pound of cure!

One of my favorite ways to use black eyed peas is as a side for fajitas or I will use it in a rice dish that I make using Vigo rice. I cook up the rice in a separate pan and in a large skillet I put in meat, red bell peppers, corn or some other veggie and then put in the drained black eyed peas last just to warm through. When rice is done cooking I combine it all together, melt some cheese on top, then top with sour cream and salsa.

I can sofrito with my mother-in-law’s recipe which included red bell pepper and a little tomato, so hers was more reddish. I use it in beef stew and in black beans. I love the convenience of it. It tastes good when you cook it with the beef or with the beans for at least half an hour for the flavors to meld.

For the Tuscan soup you can drain a can of any white beans and use immersion blender and add back a little of the liquid to cream them and add to thicken your soup. I’ve never had black eyed peas but wondering if you can add to Taco soup or chili? Val C

I just made apple butter for the first time ever. Talk about EASY!! The old crockpot method. It turned out fantastic! Next year will be equal jars of applesauce and apple butter. I’m also picking baby kale that I had cut back because of bug damage but it has grown back and now we can enjoy the sweet tender leaves. Pulled my first carrot today just to see how they were doing, they look great but they can stay in the ground until I’m ready for them😀

I saw RoseRed Homestead can sun-dried tomatoes and she just put them in oil with a few herbs. So I did that after dehydrating my tomatoes for that purpose. I used 4oz.jars and haven’t tried them yet, as I was letting them sit for a couple weeks.

I do not think that you need to bring up the acid in sun dried tomatoes. 1. tomatoes are an acid food...2. Oil is a great preservative, it coats the product and bacteria cannot get in...3. Heat during processing kills off bacteria if cooked long enough. As long as it is being processed in a clean and sanitary environment. As for the blackeyed peas. Ham and bean soup served with cornbread. I just finished another case of black eyed peas. It is also good in 7 bean soup. They can also be used as refried beans on tostadas. Lol after spices are added mist anything will taste good.

As I stated, it depends on how clean and sterile your work area and utensils. I do not think you know much about food preservation methods. You need to delve deeper before you make indiscriminate comments such as this.

I canned Zuppa Toscana without the cream and it is AMAZING. I could add the cream when I’m heating it up, but honestly if I don’t add it, it’s still soooo good. I definitely recommend.

Like you , if there is something that sits on the shelf or for what ever reason we dislike something, we do not can the following season. Completely understand what you say about the sofrito. I still can a small portion in case of an emergency.

I used to have 30+ plantain banana trees at various stages of maturity. My bunches had 100 or more bananas on a stalk. I sliced, dried and pureed them into flour. So if you ever get a good deal on some, try making flour. It substitutes for wheat flour 3/4 cup to 1 cup flour in recipes. 🏝🌊🌋

Use your black eyed peas for refried beans. They are so good! Fry up in some lard or bacon grease and onions and garlic and mashed them up. Slather on a Tostada, or nachos it's really good!!!

Black eyed peas cooked with pork sausage and onions was a staple dish in my house growing up. Brown the sausage drain off excess grease add finely chopped onions and black eyed peas (we used store bought so we always rinsed and replaced the water) cook on medium-low heat until water has simmered off and you are left with a more gravy like consistency. Sometimes bell pepper and cubed potatoes were added but just the three ingredients will work my da always called it “Bulldog stew” 🤷‍♀️

I use Black eyed peas when i make jambalaya. I smash half of the beans . I serve the black eyed peas, jambalaya with mashed potatoes. Yummy!! A lot of carbs but just amazing.

You can use that apple butter on meats when grilling, especially pork loin, in a cake, old fashioned Appalachian stack cakes (more like a pie) apple butter whoopie pies, apple butter bars, apple butter roll....cookies etc. It really is good on grilled meats pork loin, chicken, rib.

I canned 12 pounds of onions that I caramelized into half-pint jars. They make a great starter for French onion soup or on top of burgers, etc.

I ended up with peac syrup as well. Peach tea however is great. Try peach butter---made with peaches and peels (can even use dried peaches), I like it much better.

Peas (Blackeye peas) & rice or otherwise known as Hoppin John. It goes great as a main to a side of coleslaw and chicken (bbq or fried). It’s better the next day in my option. All the spices get marinated into the peas and rice. We sometimes put sausage in it an call it good. Just eat it as is.

Black eyed peas go great with anything Hispanic. We eat black-eyed beans we use every time we make burrito, taco, taco salad, fish tacos, rice and beans. Black beans just go really well with anything that you put cumin seasoning in. My personal favorite is black bean cold salad made with corn, onion tomato with taco seasonings!

My dogs love black eyed peas. We eat them with bacon for new years. I don't love them but my mom always had us eat some. Soups in the jar I haven't been a fan of. I just can ingredients now and can make what I want with them

I never eat dried blackeyed peas. They are just so unappealing to me. I'm a southern girl born and raised. I absolutely love fresh blackeyed peas grown in the garden. I buy a bag of dried peas and plant them. Then pick them as they mature...which is usually over a 2 month period. Keep em watered and they keep producing as long as you don't let any peas dry on the plants. Then after freezing the entire harvest, I will can them in quarts. When I open them I put some bacon in them, or a ham hock, and make a pan of corn bread. Oh so good.

I usually eat black eyed peas in a ham and bean soup with cornbread. There is a really good Mediterranean recipe with citrus and fresh herbs and spices that would be a good meatless option.

Black eyed peas: Saute some bacon or hock or pancetta or sausage in a little olive oil. Add some onions, shredded or diced cabbage and stir for a few minutes. Add broth of your choice and the black eyed peas. Simmer for about 15 to 20 minutes to marry flavours. Check for salt and pepper. Optionals: celery, peppers, tomatoes, heck- just about any veg.

I would use the sofrito in a curry or Chilli and just add the zoupa to a mixed bean soup. I would not get rid of it I would make it work. Peach jam can be added to muffins or cake.

Black eyed peas are one of my favorite things: Black eyed peas (well rinsed and cold), olive oil, some vinaigrette', fresh cut peppers and onion, sea salt and pepper to taste. Stir and eat as a Black Eyed Pea Salad.

We always have BEP’s as a side when I make smothered round steak(with gravy) served over rice. Or on New Years as a side with the ham and cabbage.

Black eye peas. you can add some fried cut up kielbasa, or smoked meat to the black eye peas and have with fried potatoes and corn bread. sliced fresh tomatoes. yummmmmmm

I'm about to be picking broccoli and cabbage. I'll can up some kraut or slaw and Brussel Sprouts in a month or so. Black eyes pass are delicious with ham, greens or in cowboy caviar dip.

I use applesauce as an egg substitute for baking (when the egg is the binder in the recipe) 1/4 cup apple sauce for 1 large egg

I love canned black eyed peas and yours look great. Add some good seasoning and serve over rice. Delicious! I can my zuppa without the cream, and just add it when serving. I bet that banana butter is delicious even though the color isn't great. I'm wondering if a chocolate version would be more appealing. Starbucks used to sell a dark chocolate banana topping for their oatmeal, and it so good!

I just canned apple pie filling. Then I will can the potatoes that are beginning to sprout in the pantry. Next on the list to do will be to can the greens from the winter garden: spinach, Swiss chard, collard greens, and kale. Turkeys are on sale since Thanksgiving is coming up so I will load up and then can the leftovers and broth as we use them. Before garden season begins in the spring, I will clean out the freezer and make soups. If the onions in the pantry don't last, they will be pickled. I also can every variety of dried bean to have ready at a moment's notice. Some are getting low and need to be replenished. When fruit juice went on sale I loaded up to make jellies. That is on the to do list also. My husband loves a spoon of black-eyed peas on his lettuce salads. I have a Nesco electric canner and it stays out on the counter year round. The more you experiment with new recipes, the more you will discover what a valuable tool your canner can be to make your life easier.

I always eat my black eye peas with corn ( can whole corn ). Oh, so good salt & pepper. Love ya .

Maybe add some canned potatoes in the soup and smash them or potatoes flakes to thicken it up

I was going to suggest grated potato. I PRESSURE Can all my soups, stews and curries with a little extra broth solely to drain the juices into the pan first and add a small grated potato, carrot or slice of squash. Cooks really quick and disintegrates to form a thicker sauce. When almost done, add in the remaining contents of the jar. Simmer for two minutes. Then season to taste. We prefer this method of thickening to rue/flour unless it’s for gravy or a sauce for a savoury pie filling or curry when I might also add milk, coconut milk and/or cheese. We’re in the UK. 🇬🇧 (Aka Bats**t bonkers Britain 😂)

Gonna have to find your video for the Zuppa Tuscana...love that soup and would love to have that one on hand. I am nervous about using cream in canning, esp. since I WB. As for Black Eye Peas, we eat them mostly at New Year's but in my fam, we eat them all year round as a side dish just like you would field or crowder peas. Yummmm
