I feel the same way about the applesauce! It's hard because you don't want to waste it, but you don't want all the waste, right? LoL. Anyway, it freezes really well. I do the same thing with my hummus. I make a huge batch and then freeze in smaller glass mason jars (they're freezer safe) with a good amount of headspace. Pull them out when I need more hummus/apple sauce and let them defrost in the fridge. Works out perfectly well!

Always enjoy watching you and your mom's clashing notions of how it should be done. I get to do the same with mine somewhat, but she's not "fully on board" yet with plant eating. Going to try this very soon, and am going to sub in minced pickled beets for the relish, which will add color and hint of earthiness.

This reminds me of my mother's ham spread. Wonderful. I used the food processor one ingredient at a time. After processing I put in a bowl before doing next ingredient. I didn't have smokey paprika as another commenter suggested. But regular paprika gave a nice pink color and a few drops of liquid smoke was good. Thank you for this recipe. It was very nostalgic.

@donnakeane57544 жыл бұрын
Interesting that you make that differentiation. Professional chefs use their hands all the time. As long as you keep proper cleanliness throughout, which you clearly do for yourself or you would be sick much of the time, there is no reason not to use your hands during food prep and cooking for others. We wash our utensils, pots, cutlery and serving ware with the same soap and water most of us wash our hands with in the kitchen. Think about it. Is there any chance bread was kneaded by any other way than by hand by bakers for all time until the invention of stand mixers? Pizza crusts are always shaped by hand and people are revered for their skills and put on public view in restaurants. Pasta has been made by hand for forever. Pie crust as well. Until food processors everything was sliced, diced, minced, shredded and julienned by hand. The list goes on. My point is, if you enjoy cooking with your hands do not fear it from a cleanliness standpoint if that is your concern. Cooking for other people is about love and connection. Part of that love often comes from the handling and physical contact with the food as you prepare it. Happy cooking and entertaining as and when you are able to do so. With gratitude and grace! XO
