Hey if someone reads this and can somehow help me with my issue. I am a trainee chef, i am making a trademark amenity in the place where i work, and this is nougat... my only problem is what is supposed to be the temperature of the sugar mixture when you get to display and plate it as an amenity ? One that it will not melts at all. I know that the egg mixture must be in medium peak and i slowly pour down the sugar mixture once it heats upto around 150 C... i have dried fruits with toasted pistachio and almonds.
