I had cheese toast this morning! The Novolone is rich. Because I waited until the bones cooled completely there was beef fat mixed with the marrow but it was delicious! Next batch (I have marrow/lard and plantains left), I will warm the ingredients a bit then process in food processor. Love the ingredients. No crazy shit or difficult instructions! Five ingredients and you get cheese.

Hi Stacey! I am freaking out about all your great information, ideas and recipes. Not to mention your fun personality. I asked my grocer's meat department to get me some big old bone marrow bones split lengthwise. Can't wait to try this cheese. My husband cannot have nutritional yeast, so this is exciting! I clicked on the printable recipe link and was reading about possible add ins. I see wasabi powder listed and want to tip you off that often wasabi in the USA is made of a substantial amount of mustard powder, sometimes even the powder kinds. I wouldn't know that except my husband has an allergy to mustard. True wasabi root obviously does not, so I just wanted to make sure that is on your radar. Thanks again for your videos! Love them!

Made Novolone this morning. Got everything prepped yesterday and put in fridge. Today took marrow & plantains and all the rest, put in food processor to blend. Never got melty mix just kept making a dough ball so I put it in parchment and put in fridge. Tomorrow I’ll see if I got cheese!

Stacey!!! This cheese is amazing! Thank you so much for sharing! I used 30 g of avocado oil and 30 grams of grass fed beef tallow that I had rendered. I love it! I have made 3 batches so far and it’s delicious with and without the onion powder. I will say that mine turned out way more orange than yours but the flavor is on point. ❤️

I finally got around to making the NOvalone cheese. It worked great, and I'm eating a yummy grilled "cheese" sandwich, made with plantain pita pocket bread based on your plantain tortillas. Comfort food 😁

I can't wait to try this but don't have a Vitamix blender... can I do this in a food processor? If so, with what blade? And, do I have to cook it afterwards or does it just heat up because the vitamix gets so hot the longer you let it go for? Thanks Stacey!

I think it could work in a food processor, I'd use the metal S blade. I think...or maybe the dough blade?? Next time I make this I'll experiment with my food processor. The plantain is cooked before you blend it so you will not have to cook after blending. You'll just have to mix and mix until it's spinning on it's own without assistance.

I think totally green bananas could work, I am going to experiment with that at some point. It might be softer and not as easy to shred but I am sure that no matter what happens you will end up with something tasty and useable🙂.

Hello Stacey, Thank you for doing all of these recipes for us whether they turn out or not. I love brilliant people that make my life simpler and healthier and make the process simpler. I have a question please. I have a regular blender but I do not think it will be strong enough to make the "dough" for the cheese. Will a food processor work just as well? This recipe is really tough on a blender and even burns out my Vitamix sometimes. A food processor could work, I would process it in very small batches- 3/4-1 cup at a time. Hope that helps! Thank you for the nice words💕💕

Hi Stacey! I was wondering if plantains could be frozen, for a later date? I was just diagnosed with a autoimmune disease oral Lichen Planus. I can’t have nuts, citrus, tomatoes, potatoes, caffeine, vinegar, mint, hot foods, fruit drinks, and nothing spicy. I curious, you add lemon juice to your recipes. can I omit the lemon juice, and use something else instead? Also with the pandemic lots of people are stocking up on food. What could we with autoimmune disease stock up on.? When another lock down happens.

Yes, you can freeze plantains, raw or cooked. The lemon juice is there for acidity. Not sure what you could substitute since vinegar is a no go. I haven't stocked up any more food than usual, except tiger nut flour lol. Shanna nemrow has a good post on that!

@@eyes2see438 the lemon juice is only there for acidity, not moisture. I would just leave it out and not substitute anything at all if you can't use vinegar or citrus. Search on youtube for "AIP Food Storage", her video should pop up🙂

Hi Stacey! Can you culture this cheese? I'm super interested in finding a whole-food AIP cheese that I can culture (we are eager to pair it with your sunshine sauce! ;D ) I would assume that to get the right balance of something that can be cultured, it just needs the right ratio of carbs/protein/fat, and that's why things like nuts are commonly cultured as non-dairy analogues? But I've never been able to find anyone online that experiments with combining together whole ingredients to achieve this (compared to using gelatin to make it "feel like" cheese) - I applaud your creativity!

All you need is boiling water to cook the plantains and a way to mash it all up good. Food processor, high speed blender, or even one of those big mortar and pestle things they make fufu with!

@@abio.195 Ohhh, the actual marrow part! Sorry. 😁 You can wrap the marrow bone in foil and grill 20 min. You can wrap it and steam too, I'm guessing 20 min. If you don't wrap it you'll lose all the marrow. I'm not sure what healthier alternative there would be for foil if you are grilling or steaming? Silicone sou vide bag for steaming maybe??

I don't have a fancy high speed blender (only the one that requires some amount of liquid to get going), can I use instead: an immersion blender OR a food processor to achieve the same results like your?? Also can I freeze a bunch of plantains, b'cos am I right in thinking that they need to be UN-ripened to be used successfully for your niche recipes? I'd appreciate your feedback! :)

You can definitely freeze plantains- raw or cooked. A food processor might work for this? Depends on how powerful it is and what blade type. You would be better off trying this by blending all the ingredients together with the plantain still raw and then baking it all together until firm, then chilling for a day or two. It'll be easier to blend. I don't know cooking time/temp. Was planning on experimenting with it after I run out.

This cheese is amazing for me and plus the added nutritional value of bone marrow! Do you add just the oil in the bone marrow or also the gross looking stuff that comes out with the marrow?? I just used the oil. The bone marrow part was messy 😂, and a little gross. I was skeptical, but it turned out great! And my boyfriend liked it and called it beef jerky lol. He thought it was really cool how things can taste so different combined together. Thanks so much 💕💕

Yes, you can freeze them. In any container you would normally use to freeze things, as long as you want. They don't go bad when frozen. Maybe after so many months they can get frosty but they still taste ok to me.

The printed recipe has this in it: “In a pinch, you could even use (refined!) coconut oil, although it won't be as flavorful. You can add in herbs or a few tablespoons of nutritional yeast to make up for that.”

The written recipe is on my blog www.realworldaip.com High pressure manual 35 min. Cut the ends off, cut in half. Can leave skin on, they pop out when done. If you are making the recipe with freshly cooked hot plantain it might work better in food processor with S blade. Vitamix method works best with plantain cooked and cooled overnight. Discovered that by accident 😉

Looks like such a great recipe. I tried it with the bacon fat and avocado oil, but after refrigerating it still won’t get firm. Any ideas? I used 2 T bacon fat, 2 T oil, 2 cup plantains, lemon juice and salt. Are your recipes written out somewhere? You’re an inspiration - thank you!

If you want and even "cheezier" taste to it, add nutritional yeast. You can find it in the supplemental section at the health food store and it is flaky to start with. I am not on an AIP diet, but found your channel and this recipe interesting. I like the idea of using plantains.

@@carmenin2010 I don't feel good when I eat any kind of yeast, it is on the list of foods that could be gluten cross-reactors. Like my body thinks I ate gluten because of the similar protein structure. Stomach aches and fatigue...

I don't have a Whole Foods near me. But I do have a farmers market. And grass-fed bones are crazy expensive. I guess I'm assuming you're using grass-fed bones? I have a reaction to bone broth and I know you've mentioned that you do yoo. Why do you think you don't have a reaction to bone marrow?

Yes, they were grass-fed! They were a little pricey but under $10/lb if I remember correctly. A little marrow goes a long way! The slow cooking of bone broth makes histamine rise. I don't have any reaction to bone marrow cooked like this but bone broth gives me major life altering digestive distress. I have a wonky system though😔 Others' milage may vary!

So sad - recipe does not work with a ninja blender - it splatters to the side and doesn’t blend. You need the vitamix tamper to get the job done.

I easily spent 15+ minutes scraping down the sides and it never changed - it needs continuous blending time rather than 5-10 second bursts. I don’t know that doubling will help because the blade just makes a path through the material. Thanks for responding though!

RealWorldAIP I am Paleo. Not AIP so I got a bead recipe from paleogrubs.com/crusty-french-bread and it doesn’t taste like egg. Anyway I made rotisserie chicken, cheesy toast. I used a veggie peeler to shave some Novolone on it and popped it into the broiler for 5 mins. Holy guacamole! Yum!!!
