Coloratura styles used to be more popular, find an 80s version of Green Finch from Sweeny and you will see Joanna is supposed to be a shrieking caged bird, not whatever she was in the film. The office setting definitely helps (carpet floor and acoustic tile ceilings), and the irregular pattern of fibrous materials (books/bookshelves) contributes further to cutting down sound reflections. The microphone choice (shotgun style) allows for them to get the mic closer with a narrower audio field, isolating each part to a significant degree. Also, just really talented engineers that are used to working in the space.
