My wife and I honeymooned in Barbados. When they open the doors to the plane, there is an overpowering fragrance of nutmeg. Apparently they use it in rum punch, which seems to be the national beverage of Barbados.

The spice that sustains James Townsends. Kinda crazy to think that a few hundreds of years ago the entire world's supply of nutmeg came from a few tiny islands in the middle of nowhere. Thanks to cunning Englishmen who smuggled viable nutmeg seeds out of the islands that we now have nutmeg grown more widely and the spice now more readily available.

Thank you for this video. Some time ago I bought a small jar with mace and have used it in several dishes. It’s amazing. You also offer some interesting information of what we can call “the nutmeg wars”. I found references about it in Russell Shorto’s , a great book on how this city became a seedbed for liberal thinking and many institutions and customs we have today in modern world. I enjoy the chapter on the origin of global commerce, multinational strategies and trade in which pepper and nutmeg played a crucial role.

I put half a teaspoon of mace in some soup I was making and felt tired after and thirsty, the next day I felt tired too, it must have been strong, I'll put less in next time. It smells strong

You said you'd never buy ground nutmeg and only use whole nutmeg and then grind it yourself. What about mace? Would you buy that ground? I ask because unlike nutmeg, mace is basically nonexistent in Australia so i need to buy it online.

Fresh Mace is delightful in oatmeal with either strawberries or blueberries. I tend to favor Mace with strawberries, even though I like blueberries more than strawberries.

Personally I find mace has a more peppery and savory flavor, but that could just come down to having ground mace and whole nutmeg.

Hello, What would one blade of mace equal to when ground? I can't find any information online. It varies from 1/2 a teaspoon to a teaspoon. The recipe I am making requires a blade of mace but I only have the powdered at home. Thank you!

There is no 'one size fits all' answer - a blade of mace varies wildly between plants. I'd err on the side of too little.

This is a good spice. Love the versatility of it. I got some ground nutmeg before, just so I'd have it, as it was cheap. I thought I disliked nutmeg. I decided to try whole nutmeg. Now I only use ground nutmeg, as it is completely different. You miss out on a lot of good aromas and notes with ground stuff.

I have alway's used nutmeg all my life and grate whole nutmeg over my rice pudding (plenty of it ) so i get lovely brown skin on top 😁😋...thumbs up for nutmeg!👍👍👍👍

I really don't like nutmeg mostly because people use way too much. so it becomes a nasty overpowering flavor, add to that it is actually toxic and too much will make you very sick. I have no idea why anyone uses it.

Thanks for the warning, but nutmeg is apparently only dangerous in quantities of 2+ tsp per serving. That's way more than anyone sane puts in their recipes :)

it is nasty when it's not fresh & if you use it too much.. whenever I used nutmeg, I only use just a tiny sprinkle of grounded or grated nutmeg and never use store bought ground nutmeg, oh anyway, the REAL INDONESIAN nutmeg slightly look different with the one I found here in USA, here is tend to be smaller and more oval in shape while real indo version more round and a tad bit bigger in size... speaking about toxic, candle nut is contain toxic too but it's common in Indonesian cuisine and we are all safe so far, by all means, we don't use it too much and I guess anything that is "too much" never turned good :)

I don't find people use too much nutmeg for me people use too much cloves. They overpower like the dickens. I almost don't like cloves for this reason. I use very little of it.

The MACE (not the nut) contains Isosafrole, Safrole, Elimicin and Myristicin which together form 3,4 methylenedeoxy-methyl-phenylethylamine and can then easily be synthesized into MDMA and even more active derivative analogs
