My take on a lockdown favourite. Great with a cup of tea/coffee. The spread I would use for this personally would be peanut butter and jam.
Sure to satisfy that sweet tooth.
Ingredients
- 2 ripe bananas
- 125g sultana’s
- 3 whole eggs
- 100g mixed nuts & seeds (cashews, walnuts, pumpkin seeds, sunflower seeds)
- 80g milled linseed
- 2 tsp baking soda
- 100-150g blueberries
- 250g natural Greek yoghurt
- 250g oats
Directions
- Pre-heat the oven to 180*
- Combine all the dry ingredients in a large mixing bowl
- Add the 250g natural Greek yoghurt
- Blend the banana’s, sultana’s and eggs into a wet mixture
- Pour into the large mixture bowl
- Add the blueberries and gently mix until everything is coated in the wet mixture
- Line a baking tray with grease proof paper and spread the mixture evenly
- Bake in the oven for ~80 mins
Serves 10-12 slices
