I find eating a lot of veggies, specially beets, helps me a lot with recovery

Thanks for Sharing the insight. I just wonder why there is not enough oxygen for fat burning? is it just that because you overload the body power? Is there an Issue when we just slow down a bit to adjust oxygen supply? For casual rider will it possible or not?

The enzymes involved in Beta-oxidation, the process where free fatty acids are broken down to Acetyl-CoA need to tranfer electrons to Oxygene atoms. Otherwise the process is inhibited. So if oxygen is scarce (limited by the amount you get into your body through gas exchange in your lungs, transport capacity of your blood and capilarisation of your working muscles) the body switches to more efficient pathways - i.e. carbohydrate as fuel, because in this series of reactions from glucose to ATP (your energy carrier) you need a lot less oxygen. Eventually this means: as long as your aerobic capacity is ample you can run on fat. If intensity increases you switch more and more into glucose metbolism - or: if you run out of glycogen/glucose you bonk, you need to slow down.
