I stopped by some friends' house Christmas Eve, and they asked me to visit with them while they ate their dinner. The only vegetable I saw in their table was mashed potatoes. 😢 I gave them the book "Goodbye Lupus" as a gift... maybe next year their table will look different.

Lately I've been buying more and more frozen veggies, particularly brussel spouts and broccoli. The upside is that this has increased my consumption of vegetables due to convenience, i.e. don't have to prepare by washing and cutting, just cut open bag and throw in pan or microwave in unopened bag. The frozen veggies are significantly cheaper than fresh produce, and probably more nutritious due to flash freezing.
