Petra always has the best and simple recipes. I'm more curious how Petra keeps everything so so clean like brand new, the food processer, the cutting board, knife, spoon, everything.

Lol, thank you! I can tell you :) 1. Cutting board - wipe it down with a wet cloth after each use and dry immediately. If there stains, I scrub is with baking soda and lemon juice. Whenever the board is looking dry, I use mineral oil. I never put my cutting board in the dishwasher. 2. Food processor - I never leave food in the food processor. If I am filming (and know that there will be a little bit of time when the food is sitting in the bowl), I transfer the food into a glass bowl and immediately wash and dry the food processor bowl. I never put the food processor bowl in the dishwasher. 3. Knives - just like anything else, I wash and dry my knives immediately after use. I also hone and sharpen my knives regularly and hang them in a block. Again, no dishwasher! I think that's it ;)

I make my own date/nut/seeds bars that include a wide variety of dried fruits, nuts, and seeds, plus cocoa powder (and/or carob powder). I will also add flax seeds (that I make into a meal) and also chia seeds and hemp seeds, again turning these into a meal. I make enough to put into one full baking sheet pan and cut them up into 1-inch square cubes. I figured out that based on the ingredients I use these cubes are about 70 calories on average. Needless to say, that's the point of these "Larabars" or any other date/nut/seed bars, to be densely full of healthy calories, and a mix of protein and carbohydrates. You made a good observation about the oils in the nuts as I've noticed that if I over-process the seeds and nuts that their oils come out making the mix a bit oily. I also have a Vitamix Ascent 3500 with the additional food processor kit. I blend up the dried fruits in a blender jar using the tamper separately and food process the nuts and seeds separately too (sometimes I might mix the smaller batches of seeds or nuts just for time and space saving). The dried fruit when blended becomes a sort of "dough" that I mix altogether to form a big ball of "dried fruit dough" in one large bowl. I mix the food processed nuts and seeds together in a separate bowl. I combine everything either inside my largest bowl by hand literally kneading it and take out handfuls at a time until I fill up the large baking sheet lined with parchment paper so that it's about 1-inch thick. I refrigerate the pan for an hour or so to stiffen up everything. Finally, using a ruler or using my eyes for a less exact cut, I carefully make 1-inch cuts along the width and length of the pan to make the cubes. I take out the cubes and store them in a plastic container that will fit all of the cubes. A lot of addictive healthy calories.

Hi Maria - I have an entire cookbook with dinner recipes ;) My go-to are vegetable stir-fry, vegetable pad Thai, or Portobello mushroom steaks :) Honestly, there are so many - now I am thinking I cannot leave out lentil dal and chickpea chana masala (Tanners favorite).
