Hi Slim Potatohead. To cook down means to reduce. You keep the food on a medium heat (stirring occasionally) so the food doesn’t stick to the pan. Cooking down is known to chefs as reducing. The moisture in the food evaporates leaving the dish thicker and therefore concentrating the flavour. Great video, keep them coming.

I've seen soup recipes where they have you mash the first can of beans, (or potato), to add body or thickness to the broth or soup. Then add another can of beans towards the end of cooking to have whole beans for chewing. I think that's what the contributor had in mind.

Slim, I've lived off grid in Trapper Creek Alaska for 22 years now and I adore you and your videos!! Believe me when I say you are more helpful than you realize!!! A can of Rotel fixes pretty much everything. I use it in my taco mixture, chili, soups, rice, breakfast scrambles, etc. It's the one thing I am never without. Great video! Thanks for sharing! Safe travels. 💚💙

Slim, I’m a carnivore and have to have hamburger in my spaghetti, but the black bean sauce looks great. I’ll try it at home first. Just an FYI, that Spanish Moss you were handling is, during the summer, a breeding ground for chiggers (red bugs), a tiny red burrowing parasite that itches like nothing you’ve ever experienced before. May I suggest that on your next visit you come before June 1st or after September 15th as it is hotter than blue blazes with humidity above 85-100 %. Love your vids!

Great video again!! I have a good veggie recipe for you Slim. 1 cup wheat flour, 1 cup allpurpose flour, half cup mashed potatoes, quarter cup grated cheese of your choice, 2 cups any fresh greens of your choice washed and cut into small pieces, salt to taste and 2 tsps butter / oil, Put everything into large bowl and knead to soft dough with water. let stand 15 minutes, make equal portions and roll into 1/4th inch thick flat bread, cook on flat pan till golden brown on both sides using a little oil. Serve with any dip or curry of your choice. store extra dough in fridge, stays fresh up to 3 days.

Cooking tips: Italian seasoning is herby in flavour. Add a bit of red wine if you’re using Italian seasonings. (Basil, oregano, rosemary, etc.). Using chilli powder, add some cilantro and serve on rice rather than pasta. Lots of great things can be made with tins of beans and tomatoes!

Even simpler, you can also use warmed Salsa sauce over spaghetti, or macaroni. Add drained black beans to the salsa while warming if you line.

If you haven’t already, someday you might want to check out the Outer Banks off season. But if you were cold at Carolina Beach, you would be coldER at the Outer Banks. Heading a little further south, the mountains of Georgia and the islands off the coast of Georgia are going to be warmer still. If you go much further south, you will hit the snowbirds’ playground so you might want to swing west. How long can you stay? Will you wander further south into Mexico? Baja? Quartzite? What am I saying?!? Quartzite is going to be crowded right now with their RV Show going. And the RTR will be starting in a week or two. You might be interested in both of those things! Good to see you back in the good old USA again!

Cook down means, keep cooking it until the watery sauce becomes less watery (it has now been "cooked down' or reduced. Liberal use of a spice means to use as much as you like &/or use a lot of it. I usually remove the beans away from the canned liquid to minimize flatulence. (that's what's been recommended over the years from many cooks --- I just do it in case there's truth to it).

Re canned beans: rinse and wash thoroughly to remove the salt and other preservatives. ( unless they come in a sauce or some sort) rinsed are much nicer in flavour and goodness.

Excellent choice to dip your toe toward the east...While in the Wilmington area give one of Flaming Amy's restaurants a go.....You will not be disappointed. And most definitely put the area on your revisit schedule. There is much history, great architecture and wonderful beachfront. I moved away a few years ago and while a true northerner, I miss it much!

One thing to help with the spaghetti noodle twirl Slim, is a spoon. Use the fork then wedge it into the spoon and rotate your fork until the noodles have wrapped around the fork Less messy

First: welcome to the wonderful state of North Carolina, my home. I do quite a bit of camping here. A lot of the camp host have explained to me alcohol is not permitted. That said if it is in a container that they cannot identify as alcoholic beverage, no harm no foul. Simply poured the beverage of your choice into an unidentified container. As long as you do not act the fool you are good to go. I'm a scotch drinker and I always enjoy a sip in the evening while camping. I have never had a problem just as long as I keep the identifiable container out of sight.

The spaghetti/black bean veggie sauce ...def drain black beans, always. Regular diced or stewed tomatoes is better than Rotel for spaghetti sauce. They call it North Carolina for a reason. You have to go to the coast or to South Carolina to be warm in the winter. The kayaking at Carolina Beach State Park is wonderful.

I think the second can of beans was to provide it with some texture difference after you mash down the first can with the tomatoes. I do this with my split pea soup, I make a bit of extra peas in a separate pot that I don’t mash or cook quite as long as the others. I’m making this bean and tomato recipe right now, I kinda wish I would have just withheld some of the beans out of the first can because this is going to end up being a lot of sauce. Hopefully the leftovers will freeze well 😆. Instead of mashing it, I pulsed my immersion blender through it a few times.

Even though this non-vegetarian thought the recipe sounded kinda bland I am trying to move away from red meat everyday. I have been impressed with Slims cooking combinations so I gave it a go. Same recipe, good portions of It seasoning, garlic powder, onion salt, pepper. Let it cook for about 40 minutes and used some whole wheat sghetti and parmesan. It was really good. Next time I might add a dash of red pepper. The texture was similar to my wife's sghetti sauce. Thanks Slim. Looking forward to your next adventure and meal!

Slim always good stuff. I, myself, would have bought a jar of spaghetti sauce and added the black beans and followed the instructions. You can eat half now and half later. For me eating spaghetti without garlic bread is hard. Also, Italian seasoning is a must have and usually reasonably priced. I think you may already know this, but I enjoy Commenting on stuff. Slim here is a great veggie rice dish. 1/2 cup rice 1. Cup water or more 1/2 cup diced tomatoes 1/2 cup diced onion 1 jalapeño pepper Bring to a boil then simmer until rice is cooked about 20 minutes.
