Spain if we go to the Chinese supermarket they don,t sell them return trips. 100 miles is sad .when ever I can afford the fare I eat what. I had a great challenge making this. I don't have a weighing scale so I converted it into cups. I didn't have pandan extract so I used essence n 60mls of water. First it was too soft n fluid like so I added more flour then it became too crumbly lol. In the end the balls were too soft. But I made a few to eat at home. Hope to try again soon

With palm sugar cubes I found this neat little trick. Put them in the microwave for maybe 5 secs or so (play around a bit as each microwave is different). The cubes should not melt, by putting them a few sec in micro they will soften up and be more easy to break down.

The only thing like that that I know of in my state is an Asian market that's nearly an hour away and I'd have to make a day of it, but no worries. I was already planning a trip for that market soon that also included lunch at an authentic ramen shop. I will write these down as 'must look for' lol. Thanks! Can't wait to try it.

That is true. I usually shave it using a knife (be very careful) or even hit it with a pestle. Brutal stuff, I know. Haha. You can also try the palm sugar which is sold in a plastic tub. I find that soft as you can still scoop it out with a spoon, with effort of course. Good luck!

Oh dear. Next time you can start with 30 ml of water and add bit by bit. Once it starts to be a dough, but still dry....you can add teaspoons of water. That was it wouldnt be too soft or crumbly :) Hopefully you will be successful with it and do tell me :D

Don't need to dilute if you are using pandan leaf essence (from supermarket) The pandan leaf essence is usually very concentrated. And you have to see what kind of pandan leave essence are you using, with or without colour. If your pandan leaf essence is translucent, just add a few drops of food colouring.

Just follow the recipe, so...60ml of water and few drops of pandan essence. Try to make it into a dough and then add 1-2 drop(s) of green food colouring. If you find the dough is still slightly soft, add a bit of glutinous rice flour to the dough.

Grace actually you can but fresh coconut in Germany and break it open. Then you can cut the flesh into small pieces and then grind it. But desiccated coconut is also fine

If you watch my kaya video, you will see how I extracted the pandan leave juice. There was a bit of water added but I would say that it's 90% pure pandan extract. From the supermarket, I think you can only get the flavouring. Just a few drops of that will do :)

Hi Grace, The purpose of tapioca flour is for the firm bite. While the Glutinous Rice flour gives the chewy bite. Am I right? Can I use corn flour or wheat flour over tapioca flour? Thank you
