Host Jim Kane meets with Peruvian chef Gastón Acurio at his Lima restaurant Astrid y Gastón, makes ceviche, and ventures north of the capital to the Fundación Pachacútec culinary school.

This is an amazing transformation of a country that not too long ago was ravished by terrorism. Chef Gaston Acurio’s social responsibility has empowered the entire production chain including farmers and fishermen benefiting a whole nation. Every time that I go to a Peruvian restaurant in the US or in any other part of the world I am aware how this cuisine had transformed the lives of so many people. Thanks Peru
