Buffalo sauce is just frank's red hot and butter. Every wing place in buffalo uses a variation of their own blend mixed with frank's. The original wings from anchor bar were a mix of frank's butter and herbs.

You need that crisp. The really good ones, they use two different temperature oils. Start in 375F oil for 5 minutes, then switch to separate fryer and finish in 325F or 350F oil.

for the hotness of the spice, most places it is just a matter of more or less on the Margarine/ butter or a liquid butter product(whirl) the less you add, the hotter the wing.

If youdont ask to "Fry them hard", buffalo wings are always going to be slightly soggy. That delicious acidic ass sauce is absorbed into the skin almost immediately. Because the wings arent breaded, they cook faster so that can lead to a lot of hits and misses, especially outside Western, NY. There legit only a 30 second - 1 minute between regular wings and delicious, crispy, yet saucy Buffalo wings. No one has a problem doing it.
@adamplez2498 Жыл бұрын

Guys, enjoyed your reactions. I was born & grew up in Buffalo, also known as the Queen City of the Great Lakes. Buffalo sits on the shores of Lake Erie and on windy days you can often feel the spray from nearby Niagara Falls. Fun fact: the site was first explored by the French, which called it Beau Fleuve : beautiful river after the Niagara river. Also, Buffalo was the site of a US presidential assassination in 1901, when President William McKinley was shot at the Pan American Exposition.

Since your going to the South in the states, you will probably find different flavors when it comes to Buffalo sauce. Frank's is not the go to hot sauce in the south. Its usually Texas Pete or Louisiana Hot sauce. You should definitely try these hot sauces on there own and see how the compare to Franks

This was a perfect reaction. I made wings for dinner tonight. I found a way to make them nice and crispy in the oven, so theyre healthier too (who really cares if wings are healthy). My go to is always buffalo sauce. I always keep a large bottle of franks in the fridge, but for my wings i use a new brand of buffalo sauce called Kinder's. Tonight i also tossed a couple in tai bbq and sweet chilli, but most were buffalo.

My favorite at home is to marinate wings in Franks in ziplock bags just long enough to get the wings to room temp then throw them on the grill and cook them indirectly for about an hour and a half while rotating around the grill every 15-20 minutes and flipping them after the second rotation and brushing them in Franks each time. When I first put the wings on the grill, and again after I flip them, I sprinkle the wings with Allepo pepper. Those smokey Allepo pepper flakes layered into the Franks and slow cooked on the grill make for some amazing wings. It's not as labor intensive as it sounds if you perfect your method.

My method for wings involves fresh (never frozen) wings, left whole (not cut to drums vs flats), and left in the fridge uncovered to dry the skin. I do use an air-fryer, oven-type rather than basket.360 degrees for 20-23 minutes. Try it sometime and let me know?!

Having lived in Buffalo for over 20 years I agree with the girls on this one. Duffs and Gabriel's Gate were always 2 of my favorites. Barbill is also very good, but slightly overhyped because it's some Bills players favorite wing spot, however their Beef on Weck is amazing as advertised. 911 Tavern is an underrated place as well with great wings. I hate to say it but you likely won't find many great wings down south, at least not traditional Buffalo style wings. I lived in Buffalo for a long time and also traveled to many areas of the country and good wings are hard to find. Every place you go has wings, but very few do them well. Usually small, soggy, and overpriced. When we have client in town they alway want wings because their places at home are 2nd tier in comparison. You probably will find some places with some great BBQ and smoked wings down South. Anything they do on a grill or smoker is usually great, wings included.
@bamachine Жыл бұрын
Yeah, we are more known for smoked chicken in my area(Alabama). About the best Buffalo style you can get around here is some hole in the wall spots, some are actually bbq joints where they smoke the wings then drown them in Buffalo sauce. So not technically the same but still good.

As a Buffalonian, we can't abide ranch usage on wings, only on salads and vegetable dip. lol The funny thing is that most people I know, from out, who preferred ranch to blue cheese, change their minds when they had some of the good local blue cheese dips. Blue cheese quality by brand can vary greatly, and understandably sub standard blue cheese can turn a person off that real quick.
