I always find my chili is best the next day, after all the flavors infuse and permeate the meat and beans. Topped with shredded cheddar and a dollop of sour cream, it's sublime.

biscuits and gravy is easy to make but it might be a bit strange with british sausage since its generally made with american breakfast sausage. british sausages meat generally taste very different from american, less fat and less seasoning. I once tried making it with a pork sausage that ended up tasting like salami and it was an awful sausage gravy lol. biscuits can be hard if you arent familiar with baking. its easy to over work the dough or ruin the layers if you dont know about dough lamination and folding.

For me regardless of what type of chili you make it is best to make it one day, throw it in the fridge overnight then reheat it. Makes it taste better in my opinion.

Texans (I am one) like to fuss about beans in their chili like some people do about pineapple on pizza. Whenever I make chili for a group of people, I make beans on the side for those that want to, can add them in like other unneeded fillers, such as rice, tortilla chips, etc.

In Texas, it's called "A bowl of red." It's as important as BBQ and like BBQ, there are many FIERCE competitions for it throughout the Southwest. The most notable is in Terlingua, Texas. Texans are SERIOUS about their BBQ and their chili!

Most people where I live use ground beef in their chili, where I like to use beef chunks. But I also use beans. My chili is never the same because I just use what I have on hand at the time

His "roux" is just a thick chicken gravy. This is the basis for making gravy so for biscuits and gravy...use milk instead of chicken stock then salt and pepper to taste.

As a chef, I LOVE making roux. It's weird, I know, but it is the foundation for so many dishes, and it is vital for pure taste. Also, I like doing navy beans in white chili. Just a preference, I think it tastes great. Chunked meat only for my red chili, it's objectively better.

Look into New Mexico red and green chile. Note the spelling of chile with an 'e'. It's all about the chile pepper. The name of Chile the country is a reference to the pepper: The country and the pepper are a similar shape.

Philadelphia to Atlanta is around a 13 hour drive, non-stop. No bathrooms, no food, no sights, no stopping for anything. Not to mention traffic or weather. Also FYI, Miami to Seattle is around a 48 hour drive, non-stop as well. Gonna need more than a week

I'd love to see Daz making Biscuits and Gravy from scratch on here .. The key is to make Buttermilk Biscuits .. If you can't find Buttermilk in your store then you can make it at home .. There are several videos on making it on YT .. it is simple , but makes a HUGE difference in the flavor and texture and moisture level of the Biscuits . Also TRUE Southern Biscuits and Gravy is done with Buttermilk Biscuits . .. I look forward to watching this Culinary Chaos Circus

You may not recognize the Sazon Goya. Doubt they sell it in the UK. Goya is a big Mexican food company--they sell all sorts of spices and canned foods. But they make that spice mix called "Sazon" (I'm just guessing it means "seasoning") and markets in the US in areas with large Hispanic populations usually carry it.

Both the dry chiles he's using to make this "Texas Red Chilli" are very popular Mexican chiles called chile Guajillo and chile Ancho and they are both used in several popular Mexican dishes such as Mexican Pozole, Menudo, etc. just to name a few. Chilli, the way this guy is preparing it, is NOT considered a Mexican food, it is more a TexMex food as it is a blend of Mexican chiles with Texas beef. I know he said that New Mexico also claims to be the maker of such dish...still, it would be more of a TexMex or Southwest American food and NOT something made in Mexico. Just wanted to clear that up in case somebody was a little confused about where chilli comes from.

If I could chirp in one possibly useless piece of advise, I don't care how good or authentic a Philadelphia cheese steak sandwich is, you fly into Atlanta and find an alternative in the south that is just as genuine and local to that area. No sandwich is worth a one day drive out of a 10 day holiday. None. Have faith that an authentic cheese steak restaurant opens in London, spend $100 at home trying to recreate one as close to authentic as possible or wait to have a cheese steak when your plans include a much longer visit to the eastern seaboard. Then get in some fine NYC treats, Boston, Maine and Philly. Cheers and safe travels!

OMG, Gaynor. Texas is the one state where they are fanatical about NOT putting beans in the chili. Chunks of meat vs "mince" - actually it may well be something between. In US markets you can buy something called "chili grind" which is a very coarsely ground beef and it looked like what this guy was using was that. . . . I have to take it back in that when he unpacked the meat, he was using chunks but it's still true that many people use "chili grind" meat.
