Offshore sea trial in a Princess S66 - This is Dream Boat stuff

The Princess S66 is somewhat of a Dream Boat for many of us. So for those of you who are seriously interested in owning a boat as beautiful as this, then join me for an offshore sea trial where we run 16NM down the Sydney coastline and back into Sydney Harbour.
We test both helm positions, the gyro stabilizer and make note of the speeds and fuel flow in the ocean.

Surely with a Seakeeper which takes 20 minutes to spool up, turning on and off the stabiliser would have no quick effect - you'd have to wait 20 minutes for the massive flywheel to stop then 20 mins to start again. Fin stabilisers would however, instantaneous - can anyone comment? Am i missing something?
