Dry Ingredients
6 Cups (750g) All Purpose flour
1/2 Cup (85.5g) Wheat Bran
(optional)
3tbsp (37.5g) brown sugar
1/2 tsp (1.19g) freshly grated nutmeg (optional)
2 1/2 (15g) tsp salt
1pk (11g) yeast
Wet Ingredients
1 Cup (75.9) Grated Coconut
1-2 Cups (250g-500g) Warm Coconut Milk
4tbs (56.7g) melted salted butter/margarine
2tbs (28.4g) melted shortening
Method
Sift 6 cups All Purpose flour (reserve 1 cup)
Combine 5cups of All Purpose Flour with the rest of dry ingredients in a large bowl then add grated coconut
Mix 1 3/4 Cups warm coconut milk with the melted butter and shortening
and forming a well in the middle of the dry ingredients add wet ingredients
Mix well until the wet and the dry ingredients are fully incorporated Dough at this stage feels sticky and wet
Transfer dough unto floured surface and from the reserved 1 cup of flour add little by little whilst kneading dough for 5-6mins..
Tip- grease hands with a little oil before kneading
Transfer dough into bowl and knead for a further 5-6mins continuing to add flour little by little until it is no longer overly sticky and holds its shape
Grease bowl and add dough. With your already oil greased hands, pat the surface of the dough, then cover with a damp kitchen towel and allow to rise/proof until double in size.
After dough has doubled in size punch down to release the air and let rise for a second time until double in size
After dough has doubled in size lightly knead and cut into two then form into two dough balls
On a floured surface role one dough ball at a time to about 1inch thick into any shape you desire
Transfer to a parchment lined baking sheet and using a fork lightly prick holes at the top
Let proof/rise until double in size then transfer to preheated 350F oven and bake for 30-35mins
After 30mins of baking remove from oven and brush the top and sides with melted butter. Then return to oven for a further 5mins or until golden brown in color
Remove from oven and serve with butter or cheese or your favorite filling
Yields two medium coconut bake
