Ingredients
Cake
¾ cup (175 ml) vegetable oil
3 large eggs
1 cup (200 g) packed light brown sugar
½ cup (100 g) granulated sugar
1 tsp (5 ml) vanilla extract
2 cup (300 g) all-purpose flour
2 tsp (6 g) baking powder
1 tsp (3 g) ground cinnamon
½ tsp (3 g) baking soda
½ tsp (3 g) salt
½ tsp (2 g) ground allspice
¼ tsp (1 g) ground cloves
2 cup (100 g) loosely packed, finely grated carrot (about 7 oz)
¾ cup (75 g) lightly toasted walnut pieces or raisins (optional)
Frosting
1 pkg (225 g) brick cream cheese, at room temperature
¼ cup (60 g) unsalted butter, at room temperature
3 cup (390 g) icing sugar, sifted
1 tsp (5 ml) vanilla extract
1 tsp (5 ml) lemon juice
lightly toasted walnut pieces, for garnish
Directions
Cake
1. For the cake, preheat the oven to 350 F (175 C). Grease two 9-inch round cake pans and line the bottoms of the pans with parchment paper.
2. Whisk the oil, eggs, brown sugar, granulated sugar and vanilla in a large bowl until blended.
3. In a separate bowl, sift the flour, baking powder, cinnamon, baking soda, salt, allspice and cloves. Stir in the grated carrot to coat it with the flour (this will help extract the most colour. Add this to the wet mixture and stir until evenly blended (the batter will be wet). Stir in the walnut pieces or raisins, if using. Divide this between the 2 pans and bake the cakes for 25 to 30 minutes, until a skewer inserted in the centre of the cake comes out clean. Cool the cake for 30 minutes in their pans, then turn out onto a cooling rack to cool completely.
Frosting
1. For the frosting, beat the cream cheese and butter until smooth. Add half of the icing sugar and beat until smooth. Beat in the vanilla and lemon juice and then beat in the remaining icing sugar until light and fluffy.
2. To assemble the cake, peel the parchment paper from the cake layers and place one layer onto a plate or platter. Spread the top with a generous layer of frosting and top with the second cake. Frosting the top and sides of the cakes and use your spatula to create swirls in the frosting. Sprinkle a few walnut pieces on the top of the cake as garnish, or press the walnut pieces onto the sides of the cake.
3. The cake will keep, refrigerated, for up to 3 days.

Wong Fu You can have the cleanest kitchen in the world and still have a bug. Those drawers are not airtight and any insect (ants, roaches) can get in there. Sugar yikes-they would have a heyday.

I made this cake today and it’s a wonderful recipe! I added a half cup of packed brown sugar instead, and it was still fairly sweet. I baked it in a 9x13 inch pan for 25 minutes at 350 degrees. Delicious!

I made this recipe last Sunday. Tweaked it a little bit. Reduced both the white and brown sugar by 20% and used only 95 grams of icing sugar for the frosting. 390 grams of icing sugar is waaaay too sweet. Only half a teaspoon of lemon juice. I bake for different camps (parents who are above 70 and don't like cakes that are too sweet as well as siblings & friends who enjoy sweet desserts but not overboard). Came out great 👍

This recipe is the best. I have tried baking carrot cake using a handful of different types of recipes, but nothing beats this. I’ve simply doubled the recipe and poured the batter in two 10” round cake pans. This is amazing and my colleagues love the taste.

Whenever I bake, it's an mess and I'm covered with flour. Not one crumb-not one dusting of flour on her kitchen counter, no spills, no walnuts in the floor....She is amazing.

Notice that when she poured the icing sugar inside the mixing bowl there's some it get dusted on the mixer but after the cut scene the mixer was clean. She still need to clean the kitchen and the equipment but being able to manage and plan everything before cooking and baking really helps with the cleaning afterwards. That, and a kitchen assistant.

Best carrot cake recipe! This recipe has the most flavor and is not overpowering. I baked it last night and it was perfection. The baking powder really allows the cakes to rise so you get two huge layers😄

I tried baking carrot cake for the first time and I'm very satisfied. Turned out beautiful. Great taste, not too sweet,just right. A preggy friend of mine was craving for carrot cake and she loved it. I added raisins too.

Im using a recipe similar to this except for the buttermilk it makes my cupcakes so moist. Next time i bake i will try to omit the buttermilk and follow this recipe instead 😊

This was sooooo good! First time trying a big cake instead of small sweets bc it seemed like hard work! But this was super easy and DELICIOUS! I added 1/4c sour cream, instead of nuts I added coconut flakes and an extra cup of carrot. Soooo good! May i Also say that the cake to frosting ratio was spot on. Usually recipes leave you with extra frosting but I scrapped the bowl clean this time and the layers between cake and frosting were amazing. I will say that for my taste the frosting was too sweet & I only added 2.5c instead of the 3c. Next time I will add less but that’s just me. I think I’ll make this my go to carrot cake recipe ❤️

One of my moms and my favorite cakes! Yum yum Anna! I’ve made a few, and I love the cream cheese butter cream 🧁 frosting! That’s one item I practiced until I got perfect. Why? Bc I do not like manufactured butter creams like the cans u can buy at the store...ech! It’s so easy to make buttercream and u make it to what ever flavor u love. Secret! Make ur own extracts! Simple and soooooooo good. I use Grey Goose vodka and Madagascar vanilla pods. Let them soak for a good while then strain as u use and let them sit until u take them out. I love baking Anna...as u can tell. Bless u and ur family! If u ever need or want to taste my home made vanilla just ask....I would be honored to send u a small bottle. Thank you for all u do!

I know I’m 6 years late but I am very proud of what I just did,though it’s nowhere near this perfection. Today, 12/04/2022 on the eve of my 42nd Birthday I decided to bake myself my favorite cake of all. Your video mam was the chosen amongst a million videos out there and I can proudly say that I am glad to have followed my gut to study your video and make my first attempt at baking a Carrot Cake for the first time ever and I did it. Though I must admit, I took so many things for granted, things such as time and proper preparations🤦🏿‍♂️it took me 6 hours to bake this from start to finish,I’m not upset though at least I learnt for next time,which might be tomorrow coz I don’t think this one Cake is gonna be enough,a friend who was very skeptical had a taste of my Frosting alone and he just couldn’t stop asking me to finish,he said it was better than most store bought carrot cakes and as a result couldn’t wait for the final product.😄as though we were gonna have the cake today😄 A few things I’ve learnt from my attempt, one is that I need that cake wheel,cake board and proper Pallet Knife,using a butter knife was a bit tedious I found,maybe some people are masters with it but with me I wasn’t sold,a proper pallet knife is the way to go. 2ndly...I don’t know if it was just by sheer accident or whether this is the norm but after making my Frosting I stored it in the fridge and by the time the cakes were cool enough the frosting had hardened a bit and I realized how easy it is to stick on the cake with a thick layer. Was that the right way to do it or is it just something I discovered serendipitously...?? 3rd... I used CANOLA oil and not OLIVE and/or SUNFLOWER Oil...is CANOLA suitable or not coz I didn’t like the oil I was seeing on my parchment paper as I was peeling it off the cake from the bottom,is Sunflower,Canola,Olive and/or Coconut suitable for baking ?? THANK YOU so much for your kind teaching(s),I cant wait to celebrate my birthday tomorrow 13/04/2022 with my very own baked and favorite CARROT CAKE🙌🏿🙌🏿🙌🏿🙌🏿 I can die peacefully now😄😉👍🏿👊🏿✌🏿, from Johannesburg, South Africa 🇿🇦

I saw in another chef video that oils used for cakes should be the type that doesn't harden in the fridge. This will leave the cake still moist and bouncy after being chilled unlike if the oil hardens like coconut oil.
