CARROT CAKE INGREDIENTS:
►2 cups all-purpose flour, *measured correctly
►1 cup granulated sugar
►1/2 cup packed light brown sugar
►2 tsp baking soda
►1 tsp baking powder
►1 1/2 tsp ground cinnamon
►1/2 tsp ground nutmeg
►1/2 tsp ground allspice
►1/4 tsp ground cloves, optional
►1/2 tsp fine sea salt
►1 cup vegetable oil, or extra light olive oil or canola
►4 large eggs, room temperature
►3/4 cup applesauce (or drained crushed pineapple)
►3 cups finely grated carrots (14 oz or 6 medium carrots)
►1 cup pecans, chopped, plus more to garnish, optional
►3/4 cup golden raisins, or regular raisins, optional

This is an amazing recipe. When we got married, our venue provided a carrot wedding cake and it was so good. I never did get the recipe but this is so similar. I used crushed pineapples, and made the cake into a single layer cake in a 9x13 pan, and cooked according to your directions for modification. It came out perfect. Thank you so much!

It’s really easy to make - dry ingredients, wet ingredients and mix them together. I just put everything in front of me not to forget things lol. And I use only the golden raisins for this cake - they’re not too sweet and just perfect. Natasha’s recipes are fool proof (talking about myself) 😁

I just made this Natasha and it was my first carrot cake not too sweet! I did a peanut butter icing because I had no cream cheese it was still so delicious and will be my go to recipe!!! Thank youuu!
