Fabulous, Anna! I'm Malaysian and proud of our Chef Wan. I'm also an amateur home baker and enjoy your baking tutorials tremendously! Nyonya laksa is certainly a luxurious specialty dish. I'm from Penang, where we have something called curry mee, similar to what Chef Wan cooked, although the spices might vary here and there. Penang has its own unique Laksa, also known as Penang Asam (tamarind) Laksa. Anthony Bourdain loved it during his vist to Penang. The Penang laksa soup is mainly based on tamarind and sardines(lots), chillies. The rice noodles are topped with sliced/shredded laksa flower, red onions, cucumber, pineapple, mint leaves, chillies, sometimes shredded lettuce leaves and served with a dollop of prawn paste(hae Ko). (I might have forgotten an ingredient or two). Basically a tart bowl of fish noodle soup not unlike hot and sour Vietnamese fish soup.

even Chef Wan didn't have any Michelin Stars.. but he's cook with love and so much passion, that's why his food are better. Malay style cooking "agak-agak" (slightly/estimate) the sugar, salt and etc.. not by proper measurements how many spoon of salt etc

There are many versions of laksa in Malaysia. Laksa Penang, Laksa Johor, Laksa Sarawak, Laksa Ikan Seekor, Laksa Campur, Asam Laksa and so forth. To make a good Laksa, its broth (or we call it kuah laksa) is the important key to make a delicious bowl of laksa. Only use certain types of fish that can give creaminess in your kuah laksa.
