Falafel is a delicious traditional Middle Eastern food that is usually served with hummus and tahini sauce. These hearty, earthy fritters typically are fried in oil but we have adapted the recipe so that they are just as delicious baked and oil-free. Our favorite way to eat them is tucked into a wrap stuffed with veggies and topped with our hummus and tahini sauce.

I just made these yesterday and they’re so delicious. I’m going to double batch the recipe next time. Even my non WFPB husband enjoyed them-they’re THAT good. ❤️❤️

I used to make a mean falafel, browned in olive oil and then baked. When I came across Jill's oil-free recipe, I had to make them!! I made Jill's soy yoghurt recipe and put that over them instead of the tahini because that's how we used to eat them and they were delicious - a much healthier recipe without the oil and baked! Thank you, Jill!!!! So very grateful for all your hard work creating these recipes!♥

Fantastic version! I look forward to trying this. It will go well with an Israeli salad, chopped tomatoes, cucumber, and red pepper with an easy dressing of lemon or vinegar, salt and pepper. You can use that tahini sauce as a salad dressing as well! Love this channel!!

Love all your recipes. This is very close to original Turkish recipe.you d add more greens, cilantro in particular. And once you make mix,let it stay in fridge, easier to shape. Thanks for all your work

I like to spread hummus on some lentil or quinoa flatbread and wrap up the falafels. Serve with taboulleh. OR add from fresh mint to your tahini sauce. MMMMMMM! :D

I use my medium cookie scoop to save me time after a long work day and then just flatten them with my fingers. I put them on my copper sheets since they stick to my silpat. I've already made these 3 times! 😆🥰 We love them so much! I'm going to make your feta next! 🥳 I'm so thankful for your cookbook too! The brownies are a hit as well. Brenda 🌼

I LOVE falafels. Tahini is nice, but it's really the tzatziki that really makes it. I had hoped you had come up with a vegan version of this. :(

Tzatziki can be easily made with plant-based plain yogurt mixed with a little lemon juice, chopped cucumbers and dill or chives, and a minced or pressed garlic clove.

For the tahini sauce I recommend garlic and grated radish. That’s from the south eastern Turkey.

for my sauce I use lemon, tahini, siracha and some dill. It is so tangy and good. I am usually no oil but I just use 1 tablespoon. A guilty pleasure

Mine came out crispy outside chewy inside. My mini food processor wasn't able to grind down the soaked chickpeas as thoroughly which probably made it turn out that way. I appreciate using raw chick peas where the protein content is higher per volume. In less than 10 bites, I get more than 10 grams of protein.

yes must definitely start with dry chickpeas as the cooked wont have the starch to keep the falafel together when baking.

No need for the flour or flaxseeds if starting with dry chickpeas . I use sumac for a more authentic flavor.

Would love to try this, but having problems finding dry chickpeas in my area. I can find all sorts of canned chickpeas, but not dry. It is like once the stores ran out they stopped getting any more. So frustrating.

If you make them into round balls and cook them in the air fryer they go crispy on the outside while remaining soft on the inside

Thank you for another awesome recipe Jill! These look like a great freezer staple to have ready to throw on a griddler as a "blonde" veggie burger instead of my usual black bean veggie burgers. Btw, I think you owe it to yourself to find a kosher or middle eastern grocery and buy the ACHVA brand of whole tahini, that brand really is the gold standard. I have a recurring problem with dry chickpeas that are too old. It doesn't matter how long you soak them or cook them. They just aren't right. Does anyone know how to recognize them? I can't discern the fresh ones from the ones that are beyond their usefulness.

One "trick" is to buy your dry beans from a store that often has empty or partially empty shelves in the bean aisle, so you know they are restocking the shelves often. Also, some brands put a "best by" or "use by" date on the package. The fresher beans have a date that is over a year away, sometimes 2 or 3 years away. Other brands will show the date on which they were packaged, which, obviously, should be as close to today's date as possible. The problem: not all dry bean packages carry an obvious date (some manufacturers use a code; some countries don't require the dates) and if you buy beans in bulk, you never see the package they came in at all. I don't know of any way to tell how fresh dry beans are just by looking at them.

That happened to me with a bag of kidney beans. I soaked for 2 days, then cooked and cooked for many hours and they were still hard! Yuk!

@@MickyELee Not necessary, but if people aren't buying the bulk beans and they sit there and sit there and sit there, then, yes, avoid the bulk.
