Old Country Smoker Mods

We did a few mods to the Old Country Smoker. The smokestack really improves the draft for this unit, easy to do. The drain bucket mod was easy too. The Thermoworks signal and bellows is a gamechanger! Makes this unit awesome!

I have made a few modifications to mine. Wheels and a 6 inch Tel-Tru temp guage. I like the ash pan recommendation but I'm confused on the smokestack recommendation. I would think the Thermoworks signal bellows would improve heat circulation and temperature regulation without having to add a smoke stack. Did you try removing the heat deflector/grease pan insert from below the bottom rack and see if temperature regulation was improved at all? I am thinking about modifying the diffuser by drilling a few holes to allow the gases to flow upward instead of being directed downward and down along the grease pan insert. Thanks.
