Blackberry cobbler:
2-PINTS FRESH BLACKBERRIES
1 1/2 CUPS SUGAR
1/4 CUP SALTED BUTTER
1 CUP WHOLE MILK MIXED W/ 2TBSP CORN STARCH
2 CUPS WATER
DASH OF SALT
2 CUPS OF MY BISCUIT MIX
Step 1: Bring berries, sugar, water and butter to a boil and simmer 10 minutes, (don’t add cream yet) and keep on simmer. Add salt.
Step 2: Use half of biscuit mix to make dumplings and roll out the other half for topping. Dumpling dough will have to be kneaded more and is ready when you pick it up and it does not tear apart. Topping can be rolled less and will be softer and puffier than the dumpling dough.
Step 3: Turn up heat on berries until boiling. Drop dumplings in boiling blackberry juice. Put lid on pot and simmer on low heat for 5 minutes. Now add milk w/starch and mix well.
Step 4: Pour filling into Pyrex dish sprayed with cooking spray. Top with remaining rolled dough. Sprinkle with sugar (1/8 cup). Cut pats of butter and place on top. Bake at 400 for 25 minutes.

I remember as a little girl picking blackberries and running back to my grandma's house and showing her how many blackberries I had picked and she would always say since you worked so hard picking them I'm gonna make a blackberry cobbler and some blackberry jam, just sitting here with all those memories of those special times with my grandma is something I hold on to, my grandmother is no longer with me anymore so watching this video is like having a piece of her back . Watching you make this took me back to my paternal Grandma's house in Granite Falls, NC where she made cobblers like this. And boy, were they delicious 😋. I got tickled at you saying you prefer it at room temperature and the reason being your memories of sneaking a bite as a young girl 😊 So cute. That cobbler is good at room temperature but I like it best when really warm with some vanilla ice cream. Yummy Yum, as you say.

Tammy My name is John, and I just wanted to share this with you. Sunday morning arrived and I wanted some nice fluffy biscuits, so I jumped up And through everything together, and decided to use the air fryer. (350 F 12 Min) Perfect. Was not until I went to spend Butter on one of them for my wife that I realized my mistake, I had used WL cornbread mix instead of flour. Turns out, even some mistakes Taste pretty darn good. My Mom's property in Northern California (gold country), has an extreme amount of wild blackberry vines/cover. Nice snack when walking around the acreage. The thorns are horridly sharp & it makes for great protection for the deer, coons, turkeys, & any other critters looking for safety from Cy-oats or mountain lions. We lov'em! 😋

Best way to avoid curdling when adding milk or cream to a hot dish is to add a little bit of the hot liquid to your milk/cream and mix. Then add another small dish and mix until it's warmed up a bit. Then pour that mixture into your pot of hot liquid and whisk.

Corn starch is another great way to protect milk/cream or eggs from curdling. It coats the proteins and keeps them from coagulating which creates the curds.

This is a different food subject, but do you have a recipe, or have heard of, Denver biscuits? Granny Edith made them. It was kind of a roll & biscuit combo. They were delicious. I've been looking for a recipe like it. No luck so far. I was just a little girl, watching Edith make them. I can't remember what all she did.

Not sure if this is what you’re looking for but I’ll add it here 😊@lorna865 DENVER BISCUITS 2 ¼ teaspoons active dry yeast 1 teaspoon granulated sugar ¼ cup milk (lukewarm 100 degrees) 2 cups scalded milk 1 cup mashed potatoes ½ cup shortening ½ cup granulated sugar 1 teaspoon baking soda 2 teaspoons baking powder 1 teaspoon salt 6 cups all-purpose flour Lightly grease a large bowl with cooking spray. Combine the yeast, teaspoon of sugar and lukewarm milk in a large mixing cup and allow to foam. (5-10 minutes). Mix the scalded milk, mashed potatoes, shortening, sugar in a large mixing cup. Mix 4 cups of the flour, baking soda, baking powder, salt; and the yeast mixture in the bowl of a stand mixer fitted with the dough hook. With the mixer on low, add the milk mixture. After the dough comes together, increase the speed to medium and mix until shiny and smooth, 4-6 minutes. (If the dough is sticky after 3 minutes, add the remaining two cups of flour, ½ cup at a time.) Turn the dough out onto a heavily floured work surface, shape into a ball and place in a greased bowl. Cover the bowl with plastic wrap and let rest in a warm place until the dough is doubled in size, about 1 hour. Advertisements Spray two baking sheets with cooking spray. Divide the dough in two equal pieces. Working on a lightly floured work surface, roll each piece of dough into a 12 inch circle. With a biscuit cutter cut 2 ½ inch circles, ½ inch thick and place them on the prepared baking sheets 1 inch apart. Cover the biscuits with plastic wrap, coated with cooking spray and let rise until the rolls are doubled in size, about 45 minutes. Adjust two oven racks to the upper middle and lower middle positions and heat the oven to 400 degrees. Bake the rolls until golden brown, about 20 minutes. Serve hot.

Where i come from they grow wild everywhere. Everyone is out picking blackberries when ripened in season. They are very sweet if picked in the blackest stage not reddish ones. Those are tart...my Grandsons absolutely love them. We would just go right outside and pick. They would eat as they picked...lol...I always kept blackberries in the freezer for them, in baggies. Thats one of the favorites! Those are good ol Oregon blackberries. Made cobblers , pies, jellies. Good stuff!!! 😊

This brings back good memories but they make me sad. Momma and granny use to make the best cobblers. Top and bottom crust. I can smell it baking. Love that smell. I actually use Dr Teal’s body wash and lotions that are blackberry. Thank you Tammy and Chris. Y’all have a great weekend. ❤

Looks good but this must be a down south thing. Mamaw would make blackberry dumplins but they were served from the pot, not made into a pie, and never put milk in it. We're from Southeast Tennessee, we don't put dumplins in our cobblers either. Never saw that before until I saw Brenda Gannt do it

I remember being 3 years old, riding in the back seat of a 1965 Impala and our neighbor down the street said, “children stay in the car. There are snakes out here.” She picked a bucket of blackberries and when we got home she made a cobbler similar to this. Now people would be afraid to leave children in the car 20 minutes, and it would be too hot. I don’t even remember being hot sitting in the car.

Doors were probably open. I remember picking blackberries up along the Kalamth River. I moved some vines and right there in front of my face was a fat old rattlesnake draped over the deeper canes. I think the ground was just too hot...and you can best believe I levitated right out of there...and used a stick in future fruit forays

When we moved into our country home in 83' , our pasture had tons of wild blackberries. Of course, I went out to pick with the children, saw my first copperhead, got chigger bit, and made cobbler 😊. Happy days.
