500 g flour (type 405)
20 grams of yeast
250 ml lukewarm milk
3 tbsp flour
30 grams of sugar
30 grams of butter
1 egg
30 grams of honey
pinch of salt
Guide:
250 grams of cottage cheese
200 g 30% sour cream
3 tbsp powdered sugar
1 tsp vanilla extract
1 tbsp cornstarch
2 egg yolks
100 g dried grapes
For smearing:
1 egg + 1 tbsp milk
Bake: 170°C / 338°F 40 mins.

Meine Omi hat dieses Kuchenbrot früher traditionell zu Ostern gebacken, es wurde Osterzopf genannt. Ich habe es auch schon öfters gemacht. Man kann es mit Rosinen, Mohn oder oder oder füllen. Die gezeigte Variante werde ich auch mal ausprobieren. 👍 Ergänzung: Wenn man den Zopf einfach auf ein Backblech legt, statt ihn in einem Gefäß einzusperren, hat man hinterher ein schönes Zopfbrot mit einem deutlicher sichtbaren Geflecht.
