We always use cornmeal as our thickening agent, it adds an unbelievable taste to the patties. We use them on sandwiches with a slice of raw onion and lots of mustard!

Those bones are completely edible and meant to be eaten. They are an excellent source of calcium especially for women. I grew up in southern Louisiana so I add some finely chopped onion, celery, green pepper, and parsley. I serve them with Mashed potatoes, biscuits and pan gravy, a green salad.The next day any leftovers are put inside a biscuit with warmed up gravy. That is a good lunch.

The fish bones are good for you. If you don’t want to crunch down on them all you have to do is crush them up and mix everything together. You won’t even know that they are in there.

@@baileybutterfly320 The bones are soft because they are cooked along with the salmon during the canning process. I personally remove them, but my mother always left them in. She said it was a good source of calcium.

Thank you so much for this recipe. It warmed my heart to see it. My mother used to make this on Saturday mornings with biscuits and buttered rice. We'd have breakfast and sit and watch her favorite western shows. It's one of the few recipes I did not get from her before she passed. I'm going to make this on Mother's Day.

I’m from Texas, my grandma used to mix flour and cornmeal with the onions and bell peppers! We would eat it with biscuits and karo syrup, and smothered potatoes! Ewww Chile talk about good eating, you would for sure need a nap after that. Miss those good ole days, my grandma is with God now! They are lighter inside if you boil a potato whole, then mash it up to add to the patty and dredge them in cornmeal before frying. They are light and fluffy inside and crisp outside. Salmon patties Memphis style.

Can't wait to try it this way. I love them, my Mom use to add a little flour and baking powder to make them raise. I always add chopped up red bell peppers to mines. I usually make a sandwich with mustard and mayonnaise, delicious!

@@mixedmediaartgirl300 neither of my grandmother's use potato in theirs. However I tried the boiled potato in mine. Didn't like it at all. Barely could taste the salmon.. I threw them all out and made more.. lucky I bought 2 cans.. sometimes it's best to stick to the original ways of things!

I'm from the SIP(Mississippi) also. We too, ate our salmon croquettes with syrup, n biscuits. We had a big family, therefore my mother added cooked rice to the salmon mixture, to "stretch" the salmon. Years ago, I found an interesting recipe in a magazine for salmon croquettes. I haven't tried it yet, but the recipe added English peas, n cooked mashed potatoes to the salmon. Here's a "rule of thumb" I live by too.To be on the safe side,...when taste sampling my dishs with raw eggs in them, I add all ingredients, except the eggs. I then sample my dish, n if I'm satisfied with the taste, I then add the eggs last. This is just a thought, bc, I have no personal ill, feelings of anyone sampling their dishes that includes raw eggs. As, the saying goes, "to each their own." To all...be blessed and stay safe.

... it's 3:43am Monday, in the morning, n I'm here on KZbin looking at these salmon croquettes. I should be asleep, bc, I plan to work in my vegetable garden about 6:30 this morning. I HADN'T planned on cooking Monday, bc, late Sunday evening, I cooked: baked pork chops, okra corn n tomatoes, n corn bread, and I planned to eat leftovers Monday, but after seeing these croquettes, I want some RAT NOW, bc, looking at them, has me feeling hungry!!!🤭 I ain't got "no Mike 🎤" to drop, so... My grandma made salmon patties every weekend. We ate them with grits homemade biscuits and mustard catsup molasses syrup grape jelly hot sauce and cha cha. Those were good times great memories and good eating. 😇

Wish I had paid more attention when I was younger and helping my mother in the kitchen instead of just watching and eating her delicious meals she prepared for her family of seven. I can make her chicken and dressing but there are many things I can’t because she never relied on measuring spoons and cups. The one recipe I wish I had written down was a fruit pie. She would make up a big batch put filling in a vanilla wafer or graham cracker crust and freeze them. This was back before cool whip was even on the market. But I remember her beating Dream whip or evaporated milk in her dishpan adding crushed pineapple and that is all I can remember. She wanted that pie before she died and we could not find her recipe to make one for her. I feel sorry for the younger generation because they don’t want to hear anything about what their parents had to do when they were young much less learn how to cook. Sorry for being long winded just feeling a little melancholy. Love Chef Jeffery’s channel.

Hi Chef. Growing up in the 60s in the Northeast, we also only had salmon in cans. But we thought the bones were a treat! I usually eat it as salmon salad (just like tuna salad), but I like the patties. We also used to add some leftover white rice and grated cheddar, make it into little balls, and bake them on a cookie sheet.

I add regular yellow mustard in my salmon cakes, which gives it a good taste. I also use Panko crumbs instead of flour, and minimize the mayonnaise.

I love Brer Rabbit but I prefer Steens in the yellow can. We never ate syrup with our croquettes. They were an edition to seafood nights. Fish and shrimp etcetera. Catsup and Tartar Sauce.

Speaking of, mayo n, moist, here's another "food for thought"; back around 1976-1977, a co-worker told me to add a spoonful of Miracle Whip to my corn bread mixture, to make it fluffy. I've been adding Miracle Whip to my batter every since! It makes the bread fluffy and moist. Girrrrl, dat Bread be good! I would cut me a "hunk" of dat Bread, then split it in the middle, throw some margarine in that split, let it melt, melt some margarine on top of the bread too, sprinkling some salt on top,(I use Garlic salt now) n I "GO TO TOWN" on dat Bread!!!Bread dat good is called...CONE BREAD! As Florida Evans said on Good Times, "DAMN! DAMN! DAMN!You HURD me! Forgive me, bc, I prefer "not" to use the inspirational word (blessed, n cussing word damn, together... but in this case: DAMN! I couldn't help myself🤭. Dat "CONE BREAD" will make YOU want to slap somebody! 😊Be blessed, enjoy the rest of your day, and stay safe.

That beef stew sounds DELICIOUS 😋. That type of food can fills you up, makes you lazy, and sleepy 😴. I love corn bread, but it makes me itchy. My favorite food is spaghetti,n corn bread. Any form of corn products, (and I use to eat pop corn nearly every day!!!) or Tomatoe products, breaks me out nowdays. My mother use to say, "keep living long enough... everything going to hurt you, wear out, or, break down☺️. That statement holds truth...my favorite foods, break me out in hives, so I'm now popping Benadryl, to sooth the itch🤭. I pray this doesn't get to the point where I start swelling, bc, then, it's more serious, n, I'll have to stop eating those items. This definitely reminds me of my childhood. Although, I grew up in Los Angeles, my Wonderful Mother was Born and raised in Mississippi before moving to Chicago. Lord knows I ate so many salmon patties as a child! We used use a brand called Eatwell. Both momma and grandma made salmon and mackerel patties. We used to eat them with grits or rice.

Already planned this for supper tomorrow. Just a tip, if you fry them in a bit more oil and a few minutes longer, you don't need any flour. They are super crunchy when a darker golden brown. Delicious

Salmon croquettes look delicious Chef Jeff. When I was a kid my family in the beginning couldn’t afford the salmon so my mom made the Jack mackerel croquettes with smothered potatoes and onions, rice, eggs and biscuits. We also ate fat back salt pork or strick or lean fried up crispy with eggs & homemade biscuits, , eggs and pork brains( my dad worked for Armour Dial Co. & they made them)……I just love your old school recipes. Whether it was navy beans and ham hocks, turnip greens with fatback meat in them, ham, dressing, Barbque pork, chitterlings, crackling bread, crackling, apple and peach fried pies, cakes, tea cakes, cookies or whatever, cooking was a way of showing love to your family because no one had much money but plenty love to go around. When I was growing up in NM, we ate salmon patties every year during Lent/Good Friday. With 12 kids to feed, we ate every fish bone & bread crumb! ;-)

We would have croquettes with rice, biscuits and ALGA syrup. OMG...good eating . We’d cut the syrup with pats of butter and dipped the biscuits in it...YUM-YUM-YUM-YUMMY...that was a party in my tummy when I was kid.

That was my father's favorite syrup...Alaga syrup! He said the name was short for Alabama and Georgia.

I like them thinner, with side dish of mashed potatoes and gravy,( made with pan drippings) cucumber Onion sourcream salad and hot biscuits with a big ol glass of sweet tea. WHOA, MERCY 😋

Looking good, Chef! I would love to have some of these right now! Btw, your Mama was pronouncing Salmon correctly. The L is silent. I never take the bones out, neither did my Mama. They are so soft they can’t hurt you, but it’s just a personal preference thing. Really enjoying your channel. 💜💜

This does bring back memories. I grew up in the 1930s in a small town, and I never knew that salmon came in any shape but what came out of a can. We called it "sammen" too. I have always loved salmon patties, nice and crunchy. Yours look delicious, but I never heard of putting syrup on it. Worth a try!! Our family liked to pour peas in cream sauce over our salmon patties. Just a can of peas with butter and milk, and some flour to thicken it. No cream, but we called it cream peas. I feel sorry for little kids that have never had salmon patties. I used to make them for my kids and shape them like little fish.

In WV, we serve the salmon patties with honey mixed with mustard, creamed peas & potatoes, and steamed carrots. I'll have to try them with Brer Rabbit if I can find it. I'm really enjoying your channel.

In VA where I’m from we just called them “fish cakes” we made them with salmon or mackerel. Always had some fried potatoes to go along with them, and some light bread!

Nice job! Never thought of the mayo, but I like the idea. My mom coated the outside with cornmeal. And yes, we ate ours with Brer Rabbit syrup, smothered potatoes, and homemade biscuits!

I had never seen a whole salmon either until I was maybe 17. Made Salmon patties all of the time. I love my cast iron but the granite stone got me. It takes the heat well for high sear with no problem and cleans up so easy. check it out. Oil 350

@ Deborah Sparks...all ight now! We made "sugar syrup" too, whenever we didn't have our "Delta", or "Brer Rabbit" brands of syrups. The only issue was, it took sooo long for that sugary water to cook down, before it started to thicken up to eat. UGH!!! 😫, I hated that! Be blessed n stay safe.

We ate ours for breakfast with biscuits, eggs, and rice. My grandma used cornmeal though. Not flour. I have to try the ones with flour. I ate it with hot sauce. Sometimes maple syrup

Yes, looks so good. When my coworker told me she ate salmon croquettes for BREAKFAST w/ biscuits and syrup and rice I was shocked! Couldn’t believe it! We always had them for dinner w/ spaghetti. I see your way of eating them is very popular. Anyway I’m gonna try it w/the mayo. Sounds interesting.

Sounds weird that my mom made salmon croquette like this using soda cracker crumbs in it, and always served it with canned Chef Boy R D spaghetti . Even though I don't like canned spaghetti otherwise, these two dishes seemed to go together. Watching your video makes me want to make this myself .

My fondest memories come from watching my mom and dad cooking salmon in a cast iron skillet - golden brown and Fluffy, as were their buttermilk biscuits. Us children would gave the salmon with biscuits and Alaga syrup. Sometimes with grits n eggs! Finger licking good! How many had Alaga syrup growing up? Or just syrup? Perfect combo with salmons. Wow we are vase verse, we used corn meal in the inside and coated with flour before cooking. At least someone else knows about the corn meal:-)

I definitely like taking the bones out of mine as well . I also remove the slick skin. I must definitely try this recipe I never thought of putting mayonnaise or crackers in, You are a wonderful teacher Giving old. school recipes a futuristic twist to our younger generation and keeping these recipes alive and decadent as well as especially delicious this is a must try absolutely. I remember watching my grandmother who was from Georgia make salmon patties, she never used eggs just salt pepper and flour to hold it together,,, then she fried her patties , and when i tell you they came out spectacular, they did and when I seen her make them she was living in Jersey she's been gone since 1981 and me her granddaughter has been making her salmon patties just as I remembered watching her do it and then frying them coming out awesome I like the way you doing it but just wanted to put out there that I never seen her use eggs

I made these this morning. I used 3 can of the 6 oz. Kirkland Wild Caught Alaska Pink Salmon Boneless & Skinless from Costco. They came out delicious, I will have some more for lunch. I did not coat them with flour and they are still crispy to me. I used Panko Bread Crumbs because that is what I had. Next time I will try it with Ritz Crackers. This is a very good recipe. I love fish so I will use it on Mackerels too. Thanks Chef Jeffrey for sharing this recipe. Have a blessed day

My Dad was a fisherman in his younger days (He’s almost 92 now) and loved fish any way he could get it. My Mother (RIL) made these often with fried potatoes or rice, biscuits, & gravy. Great memories ♥️

Love salmon croquettes with sryup we use Algea syrup and we use just all purpose flour onions eggs season salt and drop them in hot oil deep.fried they get real crispy. but i think i will try out your recipe to! Sir you are a mighty good cook ! you do real cookin🤗😋

I always loved salmon patties growing up. I’ve made them a couple of times in my adult years, but my kids were not fans. Now that they are older (most are grown), and their taste buds are more developed, I think I’ll try it again and see how they feel about them. I like them with ketchup mixed with Tabasco and French fries. Yum!!!
