Down here in the south (Miami), buttery cheesy grits is a must with salmon croquettes. Man I have never seen them made with fresh salmon. I'm used to the pink or red salmon in the can. Yes Yes Yes! I didn't know that Jack Mackerel wasn't salmon, even though I was reading the can. I just thought it was a code name for salmon, because my mother always said it was salmon croquettes she was making not Mackerel! I was almost grown before I went shopping for my mom and she wanted to make salmon croquettes and I actually saw with my own eyes the canned salmon! Her excuse for calling Mackerel, Salmon was the price! My mother could make change from a penny!😉😄

When the salmon is almost done I put a pineapple slice on the patties then some Yashidas teriyaki sauce in the hole of the pineapple slice. Then transfer the opinions and bell pepper to the patty. We use sandwich thins to reduce the calories and serve with sweet potato fries. One of our favorite lower cal meals. Thanks for the video I’m going to try to do my own patties.

The cost of fresh salmon is prohibitive. For me anyway. I`m sticking with canned.

AB, I’d make these anytime of the day! Added as a side either grits, rice or mashed potatoes. Your recipe is worth a try, it looks great and thanks for an awesome presentation. Have a great day! 🙃🙂

My husband is from Tupelo Mississippi. His mom made these with mackeral because it was cheaper but I make these with salmon. Until I saw your video, I would poach the salmon in milk. No more! This recipe rocks on every level including taking no time at all to make! Thank you for teaching!

Haven’t had these for a long time. My Mother wound make them every Thursday night with elbow macaroni and tomato sauce. It was poor peoples food, but I loved them so.
