This is how i was taught at a very early age to make preserves and jelly
I absolutely love to can and preserve foods
And the summer is the favorite time of the year for this
Here is my recipe for peach preserves and jelly
OLD SCHOOL PEACH PRESERVES.
This is my favorite preserves to make and eat
This recipe makes 12 8oz jars
RECIPE:
8 cups diced peaches ( firm)
7 cups granulated sugar
1/2 cups pineapple juice
1 box sure jell
Place peaches and juice in pot
Add sugar and bring to a boil
Cook 30-45 minutes until peaches are tender
Add sure jell and cook an additional 15 minutes
Add to clean jars and place on lid
Use normal proper canning method
And allow to cool
Good to eat in 14-21 days

You can also use the peach peels to make a peach jelly. The flesh left on the peel and the some of the peels will devolve in the cooking process. The peels end up making a clear peach jelly that is full of the same peach flavor as the flesh.

Chef Jeffrey, you have taken me way, way back in my childhood. My grandparents, mother, and Aunt would can peach perserves, grape jelly, fig perserves, apple butter jelly, and other kinds. We would eat it with homemade biscuits. Those was the good old days. I never did learn how until now. Thank you for your patience and showing us how to make perseves and jelly. God bless you. This definitely did bring me back to when my late mom used to do all her canned jams spices and pickles and wines those sure was good old days of fond memories of yesterday for sure..i just wish that I could turn the hands back on the clock and bring ALLLLLLLLLL my late love ones back to me chef this sure is a flashback of good old southern black folk's for sure..😊👍🏾✌🏽❤👏🏿

Mr. Jeffrey , if you sell your preserves, the customer (us) will pay for the shipping, like anything else We buy and order off line. This is a delicacy now because very few people do this anymore. It would sell especially the Chow Chow. This is great!!!

Chief Jeffrey, I have never canned anything. But my mother canned everything. She used the old pressure cooker. I was afraid of it. So, seeing you canning I think I will give it a try. Thanks for sharing.

Teach you just made me shed tears. I never knew that preserving was so easily done. Now I can't wait to start practicing on my own.. That was something that always scared me from trying. But I always wanted to learn. Back then growing up they used double boilers. I never knew nothing about the single pot. I would like to send my thanks to you and your wonderful mom for teaching you that technique. And for passing it to us your loyal viewers.. 💗👍

We can peaches in syrup and boil the peels for jelly. The peels make a beautiful pinkish, red colored jelly (about the color of a sunset). We often add vanilla beans when boiling the juice for vanilla peach jelly (my favorite). Love your videos. Keep up the good wrok.

Yes canning is very comforting. Especially on a rainy day. My mother canned everything. We came from a big garden. My favorite was pickled beets, bread and butter pickles and her apple butter. Jelly, jams and her preserves I still crave. She froze alot of our vegetables but canned them also. Thank you for bringing my memories back to when I bonded with my mother when she was alive canning and how she taught me how to master canning on the "rainy days". Continue to keep stiring up the gifts Chef Jeffery! 🎁

The blackberry jelly is best without the seeds. You can use a food mill to remove the seeds so you only end up with the juice.

Unfortunately I was too young to learn at the time before they passed away. I just bought 20 pounds of peaches that I'll be making into preserves, spiced peaches and peach pie filling. I saw one video where they didn't drain rhe cooking liquid like you do. She was disappointed that the fruit came to the top. I'm going to use your recipe to make preserves AND jelly. It looks awesome and easy to do. But then everything you make looks good! I tried your Mama's peach cobbler recipe and it was divine! ❤

I would love to see you make blueberry jelly and preserve also some chow chow. My mother used to love that but I can’t remember how to make it. I haven’t had any in about 30 or more years. Please I would love to have some of your home made chow chow. I’m almost 80 years old, but can’t remember how to make it

Hello Chef Jeff, I've been enjoying all of your videos just recently. Had not seen your canning videos but very excited to watch. I've been canning for about 2 years now and just love it. I plan on trying your chow chow recipe. My favorite part of canning is to hear the "pinging" of the of the jars sealing and of course, the end result. Thank you for sharing.

You need to put a tea towel in the bottom of the pot, to prevent possible jar breakage! To process the jam/jelly is 10 minutes, for below to 1000 feet, and 15 minutes for above a 1000 feet, in water bath canning, just a FYI.

I can (pressure and waterbath) everything lol. I've canned meatballs, ground beef, chicken, all sorts of veggies, tomato juice, homemade V8, jams, jellies, pickles...you name it. Love canning and am always on the lookout for nice bulk veggies and fruits to can. We all need to be prepared "just in case." Can't wait to get my Peach Truck peaches 7/14!

I just found your channel and man... I love it!! I just started making my own jams not too long ago, this is my 3rd summer. I have aunts who made jelly and jams when I was younger, but I wanted to do it myself. I love it. I want to start canning too. I have sold my peach jam to a local bakery. I would LOVE to see anything you do with pineapple. I just made pineapple jelly for the first time and I'm not too sure how I feel about it. Looking forward to watching more videos of yours!

You are just the best! I was thinking about canning, especially because I wanted something natural. But, I didn't even know where to start and you always explain things in such a simple and easy to understand way. This is something people rarely do anymore, a lost art that I want to learn. Can't wait until I can get ahold of some figs to do fig preserves. Btw, a friend of mine made some watermelon jelly and I wanted some so badly I sent her the shipping for it plus the cost of the jelly and it was totally worth it. If you make it, people will buy it.

That looks fabulous. My mother was a master canner, but she wouldn't teach me how to do it because she wouldn't eat anything home-canned by other people. She was deathly afraid of errors that would accidentally cause potentially fatal botulinum toxins.

This brings me back to when my grandmother made homemade jelly and preserves when I was a little girl. She would use wax for the top of jelly jars to keep them fresh.
