Sochniki are Russian shortcrust biscuits / pastries. These are filled with cream cheese.
This is an old traditional recipe that I learned from my mother.
The sochniki are easy to make with just a few ingredients. You can also use this recipe with other cheeses such as layered cheese or cottage cheese. The calories depend on which cheese you take.

ingredients
We need the following ingredients for Sochniki - Russian shortcrust pastry filled with cream cheese
For the dough:
100g butter (cold)
350g flour (type 405)
1 teaspoon of baking powder
1 egg yolk
100g sour cream (regardless of the fat level)
100g sugar
1 pinch of salt
For the filling:
350g cream cheese
1 egg white
2 tablespoons of sugar
1 tablespoon sour cream
1 tablespoon flour (type 405)
Hints:

★ Baking time: 15 to 20 minutes

👩🍳 Preparation: Sochniki - Russian shortcrust pastry filled with cream cheese
1. First we will cut 100g cold butter into cubes.
2. Now we are going to mix 1 teaspoon of baking powder with 350g of flour.
3. The flour is now in a bowl together with the butter. Mix everything nicely.
4. Now we put 100g sugar and 100g sour cream in a small bowl together with 1 egg yolk and 1 pinch of salt. We'll mix the whole thing up well first.
5. Now we add everything to the flour and make a nice dough out of it. Knead nicely.
6. Knead the dough well while still on the work surface. Then put the dough in the refrigerator for 10 to 15 minutes.
7. In the meantime we can prepare the filling. We put about 350g of creamy cream cheese in a bowl together with 1 egg white, 2 tablespoons of sugar, 1 tablespoon of sour cream and 1 tablespoon of flour. Mix everything together well. Our delicious filling is ready.
8. Now let's continue with the dough. I cut the dough in half and roll it out into an elongated dough sausage.
9. We cut about 10 to 12 small pieces of dough out of each sausage dough.
10. Now we are going to shape each piece of dough into round balls.
11. Now we take 1 ball of dough and roll it apart.
12. Now put some of the filling on the dough and press it shut. It doesn't necessarily have to be closed properly. Just press the ends down a little.
13. We heat the oven to 220 C ° and put the sochniki in it for 15 to 20 minutes. I use the top / bottom heat mode.
14. Our sochniki are ready. Good Appetite.
