This recipe yields nearly 1000 calories and 62 grams of fat per serving, if it serves four. Definitely a "sometimes food", as Cookie Monster would say.

Except that it is not… They don’t add pasta water to the Alfredo, nor do they add any flour. It’s only the Parmesan, Romano and heavy cream cooking down that thickens it. There is no debate, it’s a recipe, yours is wrong. I don’t doubt it’s good, but it’s not Olive Gardens

Sadly everything Olive Garden makes can not be reproduced at home. Olive Garden does not use flour, but a ingredient called white sauce base. This base feels a little like flour with a little bit of corn starch. Olive garden also uses Parmesan cheese instead of Romano. Also a little bit of salt and pepper is added to a batch. Everything else that is made fresh daily does use a special base that is made especially for the olive garden no one not even the workers know what is in them. I've been a production cook at the company for years. This recipe is as close as you can get. Try milk instead of pasta water also.
