It's calculated luck. If everyone wants a Omni3, the chance is like 1%. If you go for something else than others (probably counter them too) then the chance is high.

They retain their buffs. The Demon effect applys for when there is one type of demon on a board. So if you have 2 Chaos Knights on the board you still retain the buff.

Is there a reason why you sell right before you get new characters, or are you just that impatient, because that would solve alot of your problems. I mean I don't know how many times I've seen you get something you've been waiting for right after you sell something.

For every 10 gold you have, up to 50 gold, you gain an extra 1 gold at the start of each round. He sells the units right before so he can get up to the next 'interest' bracket in order to maximise his income. In addition, as you get 1 gold for beating another player he usually waits until the match outcome before acting just so he doesn't have to sell more than he needs to. Also the units that you are given depend on what other players and yourself have. As he sold the units, those units are more likely to pop up as they are back in circulation. So while it sucks that he rolled units he needed the round prior, if he kept them he probably wouldn't have rolled them.
