2 questions: that short cooking time is enough for the meat inside? How do you add water to the hot pan with oil without starting a fire??

adding water to hot oil wont 'start a fire', for the most part adding water to this much oil is safe.. you might be confusing trying to extinguish an oil fire with water. also the time is more than enough to cook the filling

When you cover the pot the condensation creates excess moisture that drips to the pan even without the additional water. Thus causes a steaming effect which allows the water to safely mix with the oil.

I made it today, everything worked perfect, except the filling was not salty enough. I suggest a bit more salt and soy sauce, otherwise perfect !!! thank you for the recipe
