For those who aren't confident in flipping the egg, you can take the pan and flip it upside down on a plate, so the top part of the omelet is now on the bottom of the plate. Then slide the omelet off the plate back onto the pan so the bottom can seal.

A good video to watch to really get the egg technique is the jacques pepin's omelette technique. It doesn't take much to master omelette, it's just about a few days of serious practice

Thank you! I've been looking for a recipe for the specific omurice sauce. I made omurice for the first time last night. Not wanting to put ketchup on eggs or rice I whipped-up a quick teriyaki sauce that worked really well! But I will try this sauce recipe tomorrow. Again, THANK YOU!

succeeded on my first try! this was so yummy, and your explanation was suuuper helpful! i used a spatula to turn the egg in fear of breaking the omelette, but it all worked out. thank you for the recipe :)))

It's very much like a french omelet and those are tough too... It looks amazing though, I'm only recently noticing I've been overcooking eggs my whole life!

Add a little more cream (I like to use heavy cream) to your eggs and they will have a smoother texture and they won't brown as fast. Also, try adding a pat of butter to your oil. Butter makes everything better lol. Your rice looks so delicious!

Sadly I'm working with an electric coil stove, but I'll keep trying. The egg part is really tough to get right. Your video did a great job explaining everything!

So excited to try this demiglace! It's taken me about seven tries to get the egg part right. I very much appreciate the camera angles in this vid. Very informative. (Also I love your choice of music! I love listening to bossa whenever I do groceries and cook!)

How hot does my pan have to actually be? I tried high heat but it made the edges puff up too soon (i used a non-stick pan on that attempt)

Traditionally omurice is made with tomato ketchup. But where in the world do you get banana ketchup?? I've never heard of that, but it sounds amazing!

I would definitely use 3-4 eggs so that there is enough substance to be rolled into the omelette and pour out!

hi im learning this recipe but i keep running into a problem: the egg keeps breaking apart. when I'm trying to fold the egg on itself, it just does not want to stay in one piece. the chopstick always rips the egg no matter how gentle I try to do it and in the end it just breaks off into small chunks or sometimes i just carve lines into the egg. how do i fix this?

Hello! The key really is in the nonstick pan and having enough oil at the right temperature!

I'm frustrated. My sauce didn't thicken like I though it would. The roux was perfect then when I added the beef broth it became to watery. Maybe I should only put a cup next time.
