Inspired by the classic nyonya kuih, these Ondeh Ondeh Snow Skin Mooncakes are certainly a unique variation of no bake mooncake to make! 🥥🥮 Fragrant gula melaka coconut filling, wrapped in a soft and chewy pandan snow skin. Not only for the mid autumn festival, these mooncakes make a great dessert for any other day too!
For this local inspired flavour of Bing Pi snow skin mooncake, we are using some ingredients used to make the Ondeh Ondeh kuih such as palm sugar, grated coconut and pandan leaves. The aroma, taste, texture and colour of these trendy Snow Skin Mooncakes are simply irresistible, just like the classic ondeh ondeh kuih itself! Certainly a perfect mooncake to celebrate the Mid Autumn Festival. And the best part is, it is extremely easy to make too. No oven required.
These snowy mooncakes are best served chilled or at room temperature. Unlike traditional baked mooncake which involves making the skin with flour and golden syrup, Snow Skin Mooncake is made with cooked glutinous rice flour (koh fun) and have a soft and slightly chewy mochi-like texture.
Don't worry even if you are new to making mooncakes, as it's actually really easy to make these mooncakes. I wish this recipe could be released soon enough but it is definitely a keeper. I will save it for next year to try out. I don’t think I can get a hold on fresh grated coconut,. Would dedicated coconut work for this recipe? I like how you incorporated one of those nyonya desserts into mooncake. 👍🏻

Thanks. Yes, its really good. I have not used desiccated coconut but you may mix desiccated coconut into mooncake paste with palm sugar flavor.

Can you check again the amount of water? 175ml vs 120 flour makes the hydration 145%. Even if you add in the icing sugar the hydration sounds like alot

Hi can replace shortening with vegetable oil instead? If yes how much ? Thx!

Don’t think you can do that. However, if you do not want to use shortening you can make the snow skin using Mochi dough instead. This method uses a mixture of glutinous rice flour, rice flour and wheat starch and mix with liquid. Then steam to make a cooked dough.

Hi Alice Liew, please clarify the amount of Pandan juice required for the making the mooncake skin. Your recipe shows 175ml pandan juice needed but your instructions says 80ml pandan juice. Also how many pandan leaves did you use to make the pandan juice? Please confirm amount of water needed to blend with the pandan leaves…..80ml or 175ml. Thank You.

Sorry for the overlook. It should be 175ml water. You can use 3 to 4 pieces of pandan leaves. Thanks for pointing out.

These are best eaten fresh after chilled. If keep in a dry airtight container, perhaps up to 1 - 2 weeks. Be sure to fry the coconut filling well. The mochi will dry out and crack if left too long.
