Growing up my Mom would make what she called icebox stew. We usually had this on Saturday and it consisted of all the leftovers from the week. Mom would save all leftovers, even if it was just a spoonful or two and added it to the pot. Along with some fresh homemade cornbread it always tasted delicious. Feeding a family of 8 on a shoestring budget wasn’t always easy but she always created miracles out of nothing.

Bartender of 16 years here with a tip when opening your wine. Make sure to use the little knife in your wine key to cut around the top of the aluminum label & take that off completely. Otherwise, when you pour, the wine hits that little rim of aluminum and can heavily altar the flavor profile of the wine!

Simple is left on the heart of our children. ‘Everything but the Kitchen Sink Soup’ is a cold evening staple here on our homestead. Smiles, rosy cheeks and crusty bread soaking up the last of our dinner provision. God is good.

I've been making my version of pantry soup for the last 3 days and I'm still enjoying it! Mine has some ground beef, onion, chopped cabbage and a bit of brown rice with a pint of my home-canned crushed tomatoes from the garden, a pint of home-canned chicken bone broth and I throw a cube of my frozen pesto in before serving for some herby goodness! Now that I'm writing it out I realized it's like a deconstructed cabbage roll! Delish!

I made Roasted Rattatoile leftover tomato soup last night! Melted a lump of butter, defrosted some tomato sauce into the pan, chopped the roasted green peppers, eggplant, carrots, golden beets, onions, left all the semi charred skins on = high fiber, found a frozen paramasan rind in the freezer and added that, all the while simmering and stirring after each addition. Salt a number of serious black pepper grinds, and all I could think of was to add a loaft of buttery garlic bread to go with this. We liked it...Glad to see this the next night, you did it fresh!

We call it Kitchen Sink Soup at my house, as in “everything but the kitchen sink”. The base is sautéed onions and garlic, a pint of tomatoes (or a handful of fresh), salt and pepper and whatever herbs (fresh or dry) I am feeling that night. To this I add a quart of broth and loads of veggies (roots, cabbage, greens, etc.). I may also add cooked beans, a browned meat, pasta or noodles. This basic soup can go so many different ways and is a great way to use up that one lone rutabaga in the fridge or the beet greens that need to be cooked up quick. I also make a drop biscuit, a savory scone or muffin with this to round it out.

In my TN country home childhood, our beloved next door neighbor was like a second mom and her kids like brothers and sisters. She kept an empty plastic half gal. ice cream bucket in her freezer, with the wire handle, and after supper each night, harvested left over bites of meat, vegs and mashed potatoes from her kids plates before she washed up. When the ice cream bucket was full, she pulled out home canned tomatoes and beans and cooked a soup/stew that only unearthly food dreams are made of. Along with her huge cast iron skillet of cornbread, it was like nothing I've ever eaten since. I'm sure I never will again. Simple country folks/saints. God rest your soul, Ms. Iva. I guess every time, for the rest of my life, I see a half gallon ice cream bucket , I'll smile and see myself at her table..

I make “freezer stoup “ yes, soup and stew. I save every single thing that could possibly go in a stoup in a freezer container. One leftover barbecue chicken breast, a small piece or two of leftover roast, with the carrots and potatoes is even better, 2 tablespoons of green beans, a half cup of leftover buttered noodles, some Spanish rice, 1/4 cup of corn, an extra baked potato, anything. I just keep layering. Then, when it’s time to make stoup, all of this pre-seasoned goodness goes into stock pot with a quart of tomato juice and whatever else I think it needs. I add spices based on what it tastes like this time. Delicious!

Yum! Pantry soup…here in my home I call it refrigerator clean out. On those busy days ( or nights when I just don’t want to cook) I scrounge the fridge for leftover veggies or whatever happens to be in there that needs to be used. And that left over bread from a few nights ago toasts up just fine with a little olive oil and some fresh herbs. Mmm🙏🏻💜

You inspired me to make soup for dinner. I had left over Costco chicken stock plus 2 cups of homemade stock and Jim Nardello peppers and small plum tomatoes (fiaschetto di manduria from Uprising Seeds in Bellingham) from the garden and the usual in the fridge of carrots and celery, walla walla’s and garlic on the counter and various seasonings and herbs from the garden. I used ditali pasta and a can of cannellini beans. My husband raved about it all evening long and I knew we were getting such good nutrition. I seem to always use some tomato paste and also chicken base plus Lawry’s Seasoned Salt. Anyway, thank you, as always, for all this inspiration and truly joy at seeing your flowers, vegetables, kitchen, root cellars, etc. It truly takes me to another dimension.

I made almost the same soup (probably about the same time you were) because my cherry tomatoes are still going strong. Earlier in the week, I had pureed my tomatoes with a little cream to make a pasta sauce so I used the leftover sauce in my minestrone soup. The addition of that little bit of cream really hit the spot. I love your idea to just throw in the halved tomatoes into the soup. I will try that next time.

"Pantry" soup for us is just about anything edible thrown into a pot and cooked, including the bits of leftover meat. My family just doesn't think it is a meal without the meat. It tends to take the visual of a variation on Sirloin soup or Rotisserie chicken soup, another of our favorite foods. Sometimes it is just a thinned out version of any soup when the pantry is running lean. Either way, it becomes nourishing, warm, cozy, and delicious. Right now we are enjoying our new to us acquired bread machines.
