Test run with rye-bread SUCCESSFUL. Have everything prepped & ready BEFORE you even turn on your stovetop! I used a basting brush to coat one side of each slice (the side facing up) & followed the instructions step-by-step. I used 2 eggs, but if the first run looks a little small for you, try 3 eggs. Always have the 'flat' edge of the bread facing each other (this is where the fold will be).

Saw my grandma Viola teaching my Mom how to do this when I was knee high to a grasshopper, in the early 60's in the hills of KY. I don't think it is necessarily one culture or another, just a way to get things done quicker cause a woman's work is never done. Grandma would put in crumbled up cooked bacon, or chopped ham & onions to add flavor also. I've done the same, & found whenever you add anything its better crumbled up, so use shredded cheese. ( like using taco spices & the Mexican 3 cheeses from my local supermarket) Garlic, spinach & olives with feta cheese is great also.

Quick u[pdate; followed the directions, used leftover taco meat & mushrooms as filler. only had thin sliced wheat bread (parents are on a strict regiment). Other than slightly overbrowning the bread, THIS WORKS!. Granted, I cheated a little & used a basting brush to coat one side of the bread slices just in case I couldn't flip & dip the bread in the egg mix, but it worked out nicely. I'd call it a 95% success! Can't wait to make the next attempt with beefsteak rye bread!
