I made this dish last evening and I must say it tasted better than it looked. I am making a few changes though. I brown the chicken and remove as you do, however, from here on, I leave everything in the skillet. Carrots and potatoes first for about 6 min. Then add fresh mushrooms and diced Anaheim peppers, then onions and garlic. You get layers of flavor by not taking everything out of the skillet. Onions will cook up fine mixed with the carrots and potatoes.

I made this for dinner tonight. I used soy sauce instead of coconut aminos (whatever the heck that is) and just all thigh meat, but otherwise followed the directions. Made in my 10" cast iron skillet and it turned out great! The family loved it. Even my picky son, said next time he wants me to make a pot of this all for himself. And the sauce was great for dipping crusty bread in too. This recipe is a winner! Thank you. Next time I'll increase the portions a bit and make in the 12" skillet.

I make almost this exact recipe. But for my sauce i use organic raw honey and put minced garlic in the honey for about 5 minutes then I coat the chicken before baking. Its PHENOMENAL :)

I am gonna surprise my wife with this recipe! Whomever gets home first does the cooking for the night. We work crazy hours in the operating room and I NEED things like this! She always dreads what I come up with lol. I'm great at tator-tot casserole and spaghetti. And grilling, but I need alot of time for that. Just came here to say...HOLY MOLY this is delicious and so easy! Followed the recipe almost exact but used corn syrup instead of honey because I didn’t want to use all my honey up (and why not, the corn syrup sits in my cabinet), and I threw in a bundle of thyme and rosemary to the sauce while reducing, and kept in while baking. Will definitely keep this in rotation! Thanks for a great recipe!!

I made this today only I kept it all in the pan being that here in Japan we don’t have ovens . My wife who is Japanese loved the soy sauce based flavor. There was nothing left in the pan . It’s a great and very easy one pot meal . I told my friend who lives in Vermont about this and I recommended using maple syrup if you can’t find soy sauce probably work as well

I've made this 4-5 times for my wife and and me. We love it. Each time I make it I tweak it a bit. I couldn't find coconut aminos in the grocery store this time so I used soy sauce. I made a mental note to stock up on aminos! Too salty even with low sodium soy sauce. I also realized I wasn't allowing sauce and veggies enough time to simmer. This time I did and the sauce thickened up some. Delicious! Great leftovers too!

I have also been obsessed with one pan dinners. I'm 67 now and even more want to make evrything in 1 pan. Less dishes to wash and flavors blend so naturally. Very good recipe(s). I have a great on for a summertime chicken & green olives (with a dash of wine) and one that is Cuban inspired called Garbanzo Refrito - I think there's wine in that one too-can we see a pattern here? Hmmm. Amazing and the simplest are the best!

This was amazing!! One of the best recipes I've found on youtube. Only thing was the chicken didn't have much flavor but we dipped each cut in the sauce and it was so yummy. I would marinate the chicken overnight next time to give this a 10 out of 10.

I always hear this... "Cook chicken till 165". But if you do that temp will keep rising after you pull out of oven of around 5 degrees and its upwards of 170. That is overcooked. So... cook till 155 degrees and then rest for 5 min and let the temp come up to 160-165. Your golden!

Made this for the umpteenth time tonight. We love it. Modified it a bit by adding fresh mushrooms before Sauteeing the onions..after a couple minutes added the onions and garlic. I also cooked up some white rice in the excess chicken stock. Excellent! Thank you, Courtney!

I forgot to buy an onion, and I should’ve made a bit more sauce because I made less sauce, I think the potatoes would have been better then, but it was still so delicious!! @@michelehoward558 I'm not sure. Maybe I used less since soy sauce can be pretty strong. I think I put some and tasted it and then put more if it needed it to taste better. I wouldn't put the same amount soy sauce at first, I would put some and then taste it as I said and put more if needed to. :)
