You are one of my favorite people in the world Pasquale! I'm the first generation born in this country, my family is from Italy, so I spent my childhood in the kitchen with my Nonna. It's been about 20 years since they've passed and I haven't been the same since. I even took culinary school because of my Nonna! Your videos, your voice and your love for food brings me right back into that kitchen making shmelts for Christmas dinner! These videos might not be much to you or anyone else, but sometimes I tear up watching them cause of the memories that come with this experience. Thank you for making these wonderful dishes and sharing your talent and soul with us. Maybe one day we can whip up something wonderful together! From one paesano to another, salute!

@AdamOS Retro Same here, but second generation. I've had similar circumstances/experiences with one exception, I never went to culinary school. I thought about doing it, but never did. Food is a passion, a binder with family and friends, and it's a language that speaks to me. I miss the older generation. They made food for the family with love. For them it wasn't work, it was done with love. I miss that so much. Pasquale brings some of that back. Thank you, Pasquale. Salute and Cin Cin.

@@milehighed52801 All my friends think i'm crazy for cooking for myself all the time but other than it's obvious health benefits, it's just fun and intriguing to do! And you're right, done with love for sure! I just made a low sodium calzone, took me about an hour to make. Had a friend come over and ask why I didn't just buy one from the pizza shop down the road. These new generations just don't know haha

@AdamOS Retro Very cool! I haven't made either a calzone or a pizza from scratch yet. I bought a Weber Kettle to do a pizza in a pizza stone over wood, but I haven't got around to it yet.

He really is amazing. After my grandma passed I never thought I would find a cook so passionate and familiar. It is like being wrapped in a warm blanket with a favorite dish by the fireside. Chef hold your hand over a bunch of tomatoes and slice them in the middle like one does when butterflying meat. If you don’t want to use your palm use a plastic lid to hold down the tomatoes. Works like a charm and done in a flash either way.

I made this last night it was so easy and absolutely one of the best pasta dishes I have ever tasted. I have also made the Sausage and Peppers that was over the top the best sausage and peppers I have ever had. His recipes are easy to follow and the videos what can I say....THE BEST

Chef Orsara, sai l'uovo sbattuto con cafe? Ricordo che la mia famiglia in Calabria lo faceva da piccola. Mia nonna ci avrebbe fatto mungere con un po 'di caffè e mettere l'uovo sopra. Lo chiameremmo "Zuppa". Ora ho sentito che qualcosa chiamato caffè all'uovo Vietnemese è diventato popolare e sono scioccato. Questa è una ricetta italiana al 100% (senza latte condensato). I make something similar, I throw in some kalamata olives and two tea spoons of pesto, then when the pasta is still hot I’ll put some pecorino cheese on top and mix it till it becomes a creamy sauce 🤤
