Got this recipe pamphlet in Dunnes at the cash out . My 6yr old picked it up looked at the picture, liked what he saw & handed it to me. Cooked it tonight , it is delicous !!!! He has good taste ,😋😋😋 Thanks Donal will cook it again.

"Boiled rice" need it to absorb the water without draining to get the best rice flavour. Rice cookers are the best investment. Yummy stir fry :), a birdseye chilli might be better to counter the sweetness then the long chilli.

For all those cnfused about wether this is authentic blah blah or not, in authentic Chinese cuisine there is no such thing as lemon chicken or orange chicken or the dreaded *shudders* egg roll. Things like that were invented in America. Also in anything authentically Chinese you wont find broccoli or tomatoes since they arent native to China. Chinese food is a lot less greasy than you think, rather its quite healthy. A lot of the food is steamed or boiled rather than deep fried. Nevertheless, a decent healthier take on a 'chinese' classsic. Keep it up Donal :)

Just made this while visiting my parents. We unintentionally made it with half the amount of chicken, but same amount of seasonings, but it was still delicious. Definitely a recipe to repeat. =)

I made this this weekend, but used tofu instead of chicken, and we don't have 5 spice in Sweden (not at hemköp or ica anyway...), but it was great! Loved it, and will definitely be making it again

Hi Donal, The point about getting a nice browning on the chicken is so important,people should understand "The Maillard Reaction" and realize where the flavor comes from,that way they will be able to adjust the cooking time and method to give the best flavor. Love this recipe and will defo give it a try! I love chicken thigh a lot more than the breast, I'm not sure if it's a Chinese thing but I grow up having chicken thigh (almost never eat chicken breast at home unless on diet!). It's much more flavoured and juicier in my opinion. I'd however change the basmati rice to Thai jasmine rice to get that sticky chewy texture (and it's my favourite rice type :)!

If you totally remove the ginger you will surely not find that authentic taste of the stir fry, lessen might be wiser :)

Czarina Marushka I never grate my ginger. I just stick in some chunks when searing the chicken to get rid of any unwanted meat odors. You won't taste it at all if you do it this way. Just remember to take out the ginger chunks before you serve it up.

Add banana. Banana makes everything taste good. Actually take out ginger, garlic, chicken, veges, soy sauce, and chilli. Then, add banana. Okay ...fine. It's a banana stir-fry now.

Hi Donal! I have had this question for UK chefs for quite some time, but never get a clear answer. Often, I see recipes which ask for red/green chilli. UK KZbinrs almost always use the type of long, slim, smooth peppers that you used here. Might you know the name of the variety?
