I mixed up the peppers a bit for the sauce. I added a couple of baby bell peppers and a habanero along with the others. It boosted the sweetness and notched up the heat. Other than altering it a bit for my taste, this recipe was spot on. I chose grilling over frying. Got a little bonus char. I highly recommend trying this for something a little different.

I made this today and it is super easy and tastes so good. I haven't had the chance to taste Nando's but I used Indian chillies and a bell pepper. I loved adding the gravy to the chicken, but for those who'd prefer crispy chicken, I would add a thin coating of sauce and let it grill and fry. Cook the sauce separately and use for dipping otherwise the crispy grilled chicken tend to get curried. Love the flavors in this recipe. Thyme makes the difference!

Just a fact-checking note: Piri Piri is from Mozambique, a former Portuguese colony, not Portugal! And yes, it is Piri Piri not Peri-Peri

Piri piri also means spicy in Japanese. ピリピリチキン (piri piri chicken) is popular here too, but made a bit different, we just use a store-bought powderes mix and deep fry it like fried chicken.

I've never had this dish before so I gave it a whirl. I will say, my thighs were fattier than yours and I had a LOT of grease on the bottom of my pan, so before adding the sauce I drained some off. Don't know if it's what I should have done, but it seemed to turn out. I did serve it over brown rice and had salad on the side. Overall, very nice! Donal for the dinner win again!

Will try this out, looks delicious. Though Piri Piri sauce and Tomato don't really relate (at least not our traditional recipe for chicken - Olive oil, chili, vinegar, salt and lemon juice, tricky bit is how to balance those ingredients :D).

Awesome method for getting the chicken thighs crispy. The sauce needed a bit more oomph though. I'll try adding some whole dried chillies to the blender next time.

I made it for dinner, the sauce is nice but the chicken was rubbery while at the same time not cooked through so I needed to stick it in the microwave. I have a way of baking chicken and adding baking powder to get the extra crisp so I might try that next time. I think a lot of people will get it wrong, are you sure about the low when the chicken is skin side down?

Yes, you can. The red wine vinegar just has a deeper flavour. Different vinegars give slightly different flavours, so I'd sugest you experiment with whatever you have around. White wine vinegar, cider vinegar (brilliant if you're grilling a pork fillet), vinegar + lemon juice, etc.

Any acid would work. Red, white, apple cider, rice even lemon or lime juice would do fine. It may alter the flavor profile slightly but probably not in a bad way. The sugar in lemon or lime juice would add a little sweetness and help with the caramelization process. If you do the fish or shrimp on grill, you'll be in flavortown for sure.

donal for the piri piri sauce, if u freeze it to use for other dishes, how long in the freezer does it keep for? thanks for the recipe, i have been wanting to try this dish for awhile now.

miaangelis Based on my freezer cooking, I'd say it will keep for 3-6 months if you bag it and get most of the air out. if you want multiple small portions, try sandwich baggies, you can do up to about 1 1/2 c of sauce safely and freeze them flat.
