Brook surprisingly completely counters Big Mom techniques even outside of their fruit. Because Brook is a skeleton he is immune to lightning and his ice attacks can counter Prometheus. But sadly Brook was a Lvl 50 vs. Lvl 1000+ monster, so the advantage means little.

But big mom is a monster and probably third strongest character in one piece. I absolutely love the idea of his epithet being "black bones" brook, but I think soul king is much cooler. The idea that he can overcome those with a weak soul is like a way of giving him haoshoku haki without him becoming OP.

That's mostly because they are the crews utility, there are things which they are much better at than fighting and it really is more important to show how far those abilities have come. Sanji may be a great fighter but he is far better cook.
