This is one of the few Quinoa cooking videos where I see sauteing the "grain" before adding the liquid! This is exactly how I cook it too and it makes for a wonderful Quinoa. :)

I usually soak the quinoa the night before to "sprout" it and that helps get rid of all the bitterness than just washing it many times. I can't wait to try this recipe this weekend! Looks delicious!

Just made it tonight, very yummy and not bland. I used chicken stock instead of water though. I only had 1/2 cup of quinoa so I cooked some couscous separately and added it afterward. This dish was light yet flavorful and I intend to make it again :) Thanks Shira!

I just discovered this channel and it's giving me some lovely ideas! I will try this recipe but I think I might throw in some cranberries as well for colour and sweetness. I find cranberries go very well with chicken and quinoa.

I bet this would be even more delicious if you used chicken stock (or even veggie stock) instead of the water.

Why do you use a different ratio for the quinoa? Isn't it normally 2 parts water to 1 part quinoa?

Can you use couscous instead?
@Marauder131
@Marauder131 10 жыл бұрын
You could but I don't think you would be able to do this in a one pot. Unless you are using Israeli couscous, which I BELIEVE you boil, a regular couscous would only need to sit after you have poured over it with boiling water/broth.

pretty easy to make. it tasted okay but it was kinda bland. not sure what else I can add...something was missing. maybe veg or chicken stock to cook the quinoa instead of water...

Garlic and thyme can be added and yep, a good stock will make a huge difference. Roasted veggies are my absolute favorite thing to mix with quinoa. Roasted zuccini and/or red bell pepper would totally take this dish to another level. The chicken can be seasoned and sauteed separately (salt, pepper, thyme and/or rosemary) then reintegrated into the cooked quinoa to help give the chicken an extra flavor pop.
@teegee2010

thank you... I will try that next time. the chicken definitely needed more flavor.

Great recipe.I think you need to stress the idea of cross contamination with food. you didn't properly sanitize your hands after handling the chicken. You spread chicken juices over the pepper grinder and other misc. items, unless you washed your hands off camera. I know that is what you will tell us. People who watch this video won't even think about the dangers of raw chicken, they will just make the recipe and possibly make someone ill. Just an observation, no negative thoughts please, just trying to keep food safe for everyone.

I've noticed this too. However, I've noticed this in literally ALL cooking videos and TV shows. I doubt that reputable chefs are neglecting washing their hands after handling raw meat. It is undoubtedly edited out simply because viewers don't want/need to watch a chef washing their hands. I think they think it's safe to assume that most people have the sense to wash their hands after handling raw meat, and not go touching everything in their kitchen with contaminated hands. Sadly, I'm sure there's some people out there who are not informed that it's unsafe (or know and just don't wash out of laziness), and do this anyway.

Because it most likely is. I'd definitely cook this in stock as opposed to water and add much more to it in terms of flavor. She pretty much only used salt and pepper.
