Hi Claudia -- I'm in south Texas and would love to know what my mom's family, who came to Texas in the 1870's, did to preserve food. .I don't have any of that info, sadly. I am a Louisiana native and my dad used to say they ate in season and when few no fruits or vegetables were available, lots of cornbread and milk.

I want to thank you for sharing your basement project earlier this year. I too have an old home and we were dealing with so much moisture. After watching your video, we inspected the perimeter of our home and saw cracks outside the house that is causing water to leak into the basement (behind the basement walls). We realized this because of your video. We know what we have to do and we have a temporary fix right now until we can get this massive project done. I can't store food in my basement because of this issue. So thank you for sharing that and for this video today.

I'm curious...if your jars are properly sealed, what is the problem with moisture in the room? I remember my mom's cellar being pretty damp growing up.

SALUTE!!! It's just me and the hubby. Empty nesters. How you do it with a family of TEN blows my mind. I can't imagine having to store that much. I have spare rooms because of being an empty nester. Spare rooms are definitely used. But, having enough for a family of TEN? My hats off to you dear. AWESOME job!!

Ughhhh I'm so jealous lol my husband retires from the Army in 2 years and we have already purchased land where we want to finally put down roots. Having a small homestead and being self sufficient is what we are dreaming of if God wills it. In the meantime been working on my gardening game and learning as much as I can about homesteading before then and your channel has helped tremendously!!

A tip start now saving up jars , lids canning supplies. Buy stuff for Christmas and BD that you both can use on homestead. Learn and make notes now about everything from garden to canning, preserving. My grandparents and parents didn’t have all the gadgets they use kill chickens now days. Start from must haves work from their

I didn't realize that you actually had to leave your house to access your cellar that is going to be tough this winter. I also have most of my food in my basement thankfully I do have inside stairs. You may want to invest in some 5 gallon buckets to make it easier to carry stuff back and forth. Also take pictures of what you have in the cellar so you can at a glance see what you have and where it's at so if you have to send the kids you can show them exactly where to go and what to get. I also have the challenge of figuring out what I want to make and unfortunately I get down there and get distracted with laundry or organizing the freezer and come back upstairs without the item I went down there for lol. The storage containers for dog food are called “Vittle Vaults”. If you search for them it might be helpful. I just want to say I understand the old farmhouse creepy basement issue. Our house was built in 1840. It is my goal to make it a more storage friendly space. Goals! Thanks for the inspiration. ♥️👍🙏🤓

Things that are to be stored with low light levels,I use brown paper bags that come in two sizes, to keep them in low light conditions. 550TX

As always, I really enjoyed seeing your pantry filled with beautiful jars of abundant blessings. I'm so happy for you! I understand being intentional about meal planning as my "pantry" is in a small bedroom on the other side of our house. No stairs to deal with here, but carrying things back to the kitchen is a little extra work. I know it's a blessing just to have room to store things, so I'm not really compaining. 😊 I usually do not read the comments of others due to lack of time, but couldn't miss the comment from the lady from Australia. I agree with her! I cannot fathom why anyone would find anything negative to say about you. How sad! It certainly says more about them than you. All we can do is pray that they find the Lord and He blesses them so richly that they have nothing ugly to say or complain about. Many blessings & much happiness to you and your family! 💙💙💙

I’m glad I’m not the only one who feels that way!! Last night I used two jars in a soup I was making and I was like “Awww now I don’t have that food anymore!” Doing what Jessica does and continually filling the empty jars is great way to keep the panty full. I know I get nervous when it gets low.

I feel in the Winter all them mice and other small animals try to come inside ..my old 1925 house also has trouble with mice in the cooler weather… It seems to always happens in the winter 🐀…

My inlaws use your butcher and I go to the aldi close to where your husband works. If your dogs ever have another litter we might be interested in a puppy to raise up to guard pigs.

I feel so much better seeing your pantry. I have been canning 3 years and I have so much canned that I feel anxious at times. But when I see other longterm pantries I feel better than I’m not hoarding but planning and prepping the same as others.

That's a lot of work and good eats! Love, love, love your new pantry! I learn so much from all of your content! Even though it's just the two of us now, I have a "prepper" pantry which has just been a regular-sized closet with shelves. I like taking advantage of sales and this gives me a place to store the overflow. I do buy flour and other dry goods in bulk and have them in food-safe buckets with gamma seals on them in my little prepper closet. Your tips really help me with my pantry.

Same. My plan is to have some beautiful built in cabinetry on that wall where my canning was. Then I can bring up a few of each jar type to store upstairs for convenience (and beauty).

I have heard that cutting off the foot of an old sock and slipping it onto a jar helps to keep out light for jars that might be upstairs and exposed to more light.

In your spare time haha. I'm sorry. A-hem. Anyway, it would be amazing if you would write a cookbook on all your recipes for your canned dinners and recipes you've shown us ie. chili base, soup base, etc. Those in particular are great. I'm going to do your jarred freeze-dried pumpkin pie soon. I have my pumpkins ready to cook and freeze-dry. I never thought of adding all the other dry ingredients to each jar. I always just bag them up. Thank you for your wonderful channel. My husband and I enjoy your channel and found you through RuthAnn. p.s. I freeze-dry my bone broth as well. It saves a ton of space.

I love seeing your new storage space, and totally understand about the convenience/inconvenience issues. We live in a mobile home and I had food stored in every nook and cranny. This summer hubby bought us a beautiful shelving unit and we started gathering things up. It has helped so much in being able to see what I need to use, how many I have of each, etc. The only drawback is that it's the same temperature of the house (NOT cool), and it's not totally dark. However, it's such a huge step forward. Now, I was just wondering. Do you not can tomato sauces and beans or did I miss them? I saw salsa and some soups, and then I heard that you have bags of tomatoes in your freezers. Tomato products are a huge must in my canning, and last year I canned beans. What a difference in taste from store canned beans! THANK you for your videos, and it also gives me a glimpse of my growing-up area of the country (NW Ohio) whenever I see them, and I so enjoy that while I love North Central Florida now in my old age.

I love pantry tours 💕 Two weeks ago now, my husband and I went to the state farmers market to buy bulk produce (aprox 200lbs+ plus about another 20 from a local place) because my garden did terrible. Like I was only able to get enough tomatoes for 5 pints of sauce. So I spent that week canning everything up. 😅😅 I know know why you do the everything counts challenge. Whew boy. That was a lot on top of homeschooling my two school age kids. Haha. I was going out of town so I had to get it all done. It was rough. And we learned not to do that again. But I was able to can 172 jars, and most were new items for us. (Newer to canning). Most were pints, but some quarts and then the half pints and quarter pints for some things. But I’m excited to have it done.

Excellent work on the new pantry (and LOTS of work too!) and I'm sure you'll be super excited next year when, hopefully, the cold room will go in. If I may suggest - you mention how intentional you have to be now in meal planning, because you have to go down to 'shop' for the ingredients - wouldn't this make a great learning opportunity for the older children, to each be responsible for planning one meal each week & going down to 'shop' the ingredients? If the younger ones are eager to take part in meal planning, when they reach an age you deem appropriate they could begin with something simple like pasta. Just a suggestion, and a way to reduce Mom's trips up & down the basement steps. God bless!

Looks good! A lot of work, but well worth it. Well done! It will take you some doing to get used to the canning not being right there, but you will get used to it. Running down stairs is not bad - as you said, you make it work. Maybe set up a table and chair so you can sit down there for some quiet time and come up with your meal plan.

Great video.....I grew up helping my Mama and Granny canning and preserving foods .... My Mama had a huge freezer as well so what we didnt can we froze..my Granny didnt have electricity in her home so she canned or dried her veggies and meat...she would dry veggies in the sun and herbs as well...she had a smoke house...a well house...a canning log house ....she did a lot of her canning outside...only she water bath everything...you make me think of her with your ideas of scrap canning ....love your family and homelife...you have the most beautiful baby...God Bless you and yours..

Please do some videos on your new planning of meals from your pantry and shopping your pantry weekly. I too have to really focus on what is my my pantry and meal plan more intentionally. This way I ensure that I use my food stores are used and rotated through. Your menu ideas will help all of us.

Your cellar is nice! Can you talk more about how to make your adrenal cocktail? My adrenal glands are so depleted. AND, I have a tumor on my left adrenal that the doctors have decided to "leave it alone", even though it is getting bigger.

I recommend earthquake proofing your shelves. My husband just recently did ours. I would hate to loose my jars to sliding off the shelves if the ground shakes! 😊

Thankfully we don't have to deal with earthquakes here in our area of Ohio. Lived here 42 years and have never experienced one. But maybe it's a good idea just in case.

Hello Jessica. One of my favorite things about you the keeps me coming back to watch your videos, is not just about your intelligence in taking care of your family, but you don't push judgements about others in your videos or others' lifestyles. I am sorry that you have to put up with comments from judgmental people on the other side of things. You seem to be a very strong person that moves forward with what is best for your family and that is your focus. I appreciate your effectiveness and also working with allergies, sensitivities and other health issues and finding natural ways to cleans and/or avoid consequences of those issues. Jessica when you finish your cold room for the storage of fruits and vegetables do not store your apples with the other fruits and vegetables. Store them absolutely separate. Apples as they ripen give off ethylene gas and that gas promotes ripening and rot in other fruits and vegetables. Therefore if you count on a storage life of 6 months for a given vegetable, the storage life will be cut by 1/3 to 1/2. I keep my apples in a separate room built into the same cold storage area and separately vented. God Bless Joe Scott Muddy Dog Ranch

Maybe do a weeks meal plan, and gather all your ingredients for the week at one time from your cellar. You would have to store them upstairs, but would keep you from making many trips to the cellar. Especially when it's freezing cold outside. I really do love your channel, and all the great ideas and tips you share. You are a wealth of knowledge

Jessica, please take us along when you make the chicken soup.... from the beginning to the end. I know you can't show the dispatching but I am really interested in how you get all the meat off the bone and of course making the soup. I've seen another video where you filled the ingredients without the thickener but I'd love to see how you cut up the chicken. I am just getting into this now in my old age, lol! We are trying to be way more self sufficient and you have taught me so much since I found you in August. When we dispatched some chickens we put the whole chicken into the freezer and haven't even used them yet!

I watched RuthAnn's video the other day, and it thrilled me, because I have been wanting something like an old fridge or root cellar (not happening!) to put fresh foods in from the garden or farmers market and keep it fresh a while. I really liked your organization, and those big white bins are fantastic! I have all sorts of things here, there, and everywhere in the basement. Yet I'm trying to be organized so I know where things are. Because if you have it, but you don't know where you put it, it's as if you do not have it! A word to the wise, last year, as I was reorganizing my pantry, I found a jar of peanut butter that had been gotten into by mice. They cut into the bottom of the jar with their little teeth, and had a great time! If they think you have something they want, they'll find a way to get it!

We used to live in an old house that had a cold cellar attached to the basement. Absolutely loved it-and the house! But it was three stories and out brain-tumor child couldn’t handle the stairs. So we moved to a ranch-style home. Sure miss our first home, though!
